Easy and Healthy Kefir Pancakes with whole wheat flour, no buttermilk, butter or sugar! Kefir protein pancakes use protein powder and are just as light and fluffy as your favorite breakfast food.
Ingredients
⅔cupWhole Wheat Pastry Flour, 80g
⅓cupUnflavored Protein Powder, Whey-casein, 30g
2TbspVanilla Protein Powder, Whey-casein, 11g
¼tspBaking Powder
¼tspBaking Soda
1cupLow Fat Plain Kefir, 240ml
3TbspUnsweetened Applesauce, 45g
2TbspUnsweetened Almond Milk, 30ml
1Egg
½tspVanilla Extract
Instructions
In a bowl combine flour, unflavored protein powder, vanilla protein powder, baking powder and baking soda.
In a large bowl, whisk kefir, applesauce, milk, egg and vanilla extract.
Pour dry mix into wet and stir together to form thick batter; Small clumps of flour are okay.
Heat a nonstick griddle or pan on medium-low (lightly grease with oil spray) and scoop out about ¼ cup batter on it.
Cook for about 2 minutes until edges are slightly dry and bubbles start to appear on top.Flip and cook other side for 1-2 minutes.Repeat with remaining batter (makes about 6 pancakes).
