Warm Carrot Cake Protein Bowl with shredded carrots, spices and a cream cheese topping made in the microwave. Healthy carrot cake breakfast bowl is sweetened with protein powder and is low carb and sugar free too.
Ingredients
1cupShredded Carrot, 110g
½scoop Vanilla Protein Powder, Whey-casein, 15g
½scoop Unflavored Protein Powder, Whey-casein, 15g
⅓cupUnsweetened Almond Milk, 80ml
¼tspCinnamon
Pinchof Nutmeg
Pinchof Cloves, Ground
Stevia Sweetener, to taste
Cream Cheese Topping:
1TbspReduced Fat Cream Cheese, 7g, Room Temperature
1TbspNon-fat Plain Greek Yogurt, 7g
1tspVanilla Protein Powder, Whey-casein, 2g
Toppings:
1tspChopped Walnuts, 5g
Instructions
Microwave carrots on high for 1½-2 minutes (until steaming and soft).
Add in vanilla protein powder, unflavored protein powder, milk, cinnamon, nutmeg, cloves..
Mix, adding in sweetener and milk as needed.
Cream Cheese Topping:
Combine softened cream cheese, Greek yogurt and protein powder in a bowl.
Spread on carrot cake bowl.
Top with walnuts and serve warm!
