Sinfully good Halloween Oreo Protein Brownies are the perfect fusion of indulgence and health-consciousness. They’re lower fat, low sugar and packed with protein from Greek Yogurt and protein powder.
Ingredients
½cupUnsweetened Cocoa Powder, or Cacao Powder, 40g
⅓cupChocolate Protein Powder, Whey-Casein, 30g
⅓cupChocolate Protein Powder, Whey, 30g
½scoop Unflavored Whey-Casein Protein Powder, 15g
¼cupWhole Wheat Pastry Flour, 30g, see post for subs
3TbspAlmond or Cashew Butter, 48g, see post for subs
1tspVanilla Extract

Instructions
Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
In a bowl, whisk cocoa powder, chocolate protein powders, unflavored protein powder, zero calorie sugar replacement, flour, stevia sweetener, baking soda and baking powder.
In a large bowl, whisk together Greek yogurt, almond milk, almond butter and vanilla.
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the brownie dense.Batter should be thick.
Transfer ½ batter into pan, spread and smoothen.Place 12 Oreos in the center of the batter.Top with rest of the brownie batter and spread to cover.Sprinkle 1 chopped Oreo on top.
Bake for 25-27 minutes or until the top is set. Toothpick inserted into the center should come out slightly damp.
Remove from oven and let cool completely.
Notes
For extra gooey brownies, remove at 22 minutes when the tester comes out slightly moist.
