Mini Apple Pie Bombs are the perfect combination of sweet, satisfying, and guilt-free. A high protein, low sugar dough with sugar-free cinnamon apples and coating, made in the air fryer!
Ingredients
⅔cupWhole Wheat Pastry Flour, see post for sub, 80g
⅓cupVanilla Protein Powder, Whey-casein, 30g
2TbspUnflavored Protein Powder, Whey-casein, 11g
1tspBaking Powder
1TbspCold Butter, Grated, 14g
¼cupUnsweetened Almond Milk, 60ml
⅓cupNon-fat Greek Yogurt, 75g
Apples
¾cupChopped Apples, 84g
2TbspWater, 30ml
½TbspZero Calorie Brown Sugar, 6g, or regular
⅛tspCinnamon
Top:
1tspMelted Butter, 5g
1TbspZero Calorie Granulated Sugar, 12g
Instructions
Apples:
Heat small skillet over medium heat, add apples, 1 Tbsp water, sugar, cinnamon, and cook about 3-4 min until slightly caramelized (shaking every now and then).
Transfer to plate and let cool 5 min.
Dough:
In a bowl, combine flour, protein powders and baking powder.
Add butter, yogurt and milk - little at a time - and mix with a spoon to until just combined. You should have a smooth dough.
Lightly flour a work surface, transfer dough to surface and knead until smooth - about 10 seconds.DO NOT OVER-MIX or it will make the dough tough.
Flatten out into rectangle 1-1½” thick.Cut into 10 pieces.
Assemble:
Flatten, make depression in middle, place some apples mix in middle, cover with remaining dough and roll into balls.
Preheat air fryer to 375°F.Spray basket with oil spray.
Place balls in air fryer. (keep extras in fridge if working in batches so butter in dough doesn’t melt)
Air fry 4-5 minutes until golden-brown.
Brush with melted butter, roll in granulated sugar and enjoy!
