Healthy Chocolate Mousse Cake is high protein, low fat and low sugar too! Triple Chocolate Mousse Cake with a high protein chocolate cake, protein chocolate mousse, white chocolate mousse and cocoa powder.
Ingredients
7TbspChocolate Protein Powder (Whey-casein), 40g
⅓cupWhole Wheat Pastry Flour, see post for subs, 40g
2TbspUnflavored Protein Powder, 11g, see post for subs
2TbspCoconut Flour, 14g
2TbspUnsweetened Cocoa Powder, 10g
1tspBaking Soda
¾cupHot Water, 180ml
½cupUnsweetened Applesauce, 120g
½TbspMelted Butter, 7g
2tspLemon Juice, 10ml
½tspVanilla Extract
Chocolate Mousse:
1cupNonfat Plain Greek Yogurt, 225g
⅓cupChocolate Protein Powder (Whey-casein), 30g
1½TbspChocolate Pudding Mix, 10g, Sugar free
2TbspCocoa Powder, 10g
3TbspUnsweetened Almond Milk, 45ml
White Chocolate Mousse:
1cupNonfat Plain Greek Yogurt, 225g
⅓cupVanilla Protein Powder (Whey-casein), 30g
2TbspWhite Chocolate Pudding Mix, 15g, Sugar free
¼cupUnsweetened Almond Milk, 60ml
Instructions
Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper.
In a bowl, whisk chocolate protein powder, unflavored protein powder, flour, coconut flour, cocoa powder and baking soda.
In a large bowl, whisk together hot water, applesauce, butter, lemon juice and vanilla.
Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense.
Pour batter into pan, bake for 18-20 minutes.A tester inserted into the center should come out clean but moist.
Let cool for 10 minutes, transfer to cooling rack to cool completely.
Chocolate Pudding Top:
In a bowl, mix Greek yogurt, chocolate protein powder, cocoa powder, chocolate instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
Spread on cooled cake.
White Chocolate Pudding Top:
In a bowl, mix Greek yogurt, vanilla protein powder, white chocolate instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
Spread on chocolate pudding layer.
Place in fridge 1 hour, dust with cocoa powder and cut into 8 slices.
