Wrap up your week with these Curried Chicken & Broccoli Wraps. Aromatic and strongly flavored broccoli and chicken in a soft or crispy shell is sure to be your new lunch fave!
Ingredients
2Whole Wheat Lavash Wraps, or Tortillas
½tspOlive Oil
¼cupOnion, Chopped, 40g
1½tspGarlic, Minced
½cupTomato, Diced, 100g
2tspCurry Powder
¾tspTurmeric
⅔tspCayenne Pepper
⅔tspCumin
½tspBlack Pepper
¼tspCinnamon
¼tspRed Chili Powder
¼tspSalt
3cupBroccoli, Chopped, 270g
1cupChicken Breast, Cooked & Shredded, 80g
Instructions
Prepare filling:
Place broccoli in a bowl, cover with a damp paper towel and microwave on high for 2 minutes. Set aside.
Heat the oil in a large pot over medium heat, and fry onions and garlic for 2 minutes until translucent.
Stir in the diced tomatoes and spices, and about ½ cup water. Let cook for about 3-4 minutes until the spices are fragrant.
Add the broccoli and chicken, stir, bring to a low simmer and cook for around 3 minutes, until slightly thickened and chicken is warmed through.
Assemble:
Place wrap on a work surface.
Spoon the filling from one end, upto ¾ the way till the other.
Gently roll up, pushing the filling down to make the wrap as tight as possible.
Cut up and toast in the oven for about 5 minutes or until crispy. Microwave on high for 2 minutes as an alternative.
