Best ever Birthday Cake Protein Brownies make every day a celebration! Healthy birthday cake brownies is a protein brownie with a low sugar, high protein birthday cake frosting!
Ingredients
½cupUnsweetened Cocoa Powder, or Cacao Powder, 40g
⅓cupWhey-Casein Chocolate Protein Powder, 30g
⅓cupWhey Chocolate Protein Powder, 30g
½scoopUnflavored Whey-Casein Protein Powder, 15g
¼cupWhole Wheat Pastry Flour, 30g, see post for subs
2TbspZero Calorie 1:1 Sugar Replacement, 24g
¼tspBaking Soda
¼tspBaking Powder
1cupNon-fat Greek Yogurt, 225g
⅔cupUnsweetened Almond Milk, 160ml
⅓cupUnsweetened Applesauce, 80g
3TbspAlmond or Cashew Butter, 48g, see post for subs
1tspVanilla Extract
Birthday Cake Topping:
1cupNon-fat Greek Yogurt, 225g
⅓cupBirthday Cake Protein Powder, 30g
1TbspSprinkles, 12g
Instructions
Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
In a large bowl, whisk cocoa powder, chocolate protein powders, unflavored protein powder, flour, zero calorie sugar replacement, baking powder and baking soda.
In another bowl, whisk together Greek yogurt, almond milk, applesauce, almond butter and vanilla.
Add wet mix to dry, and whisk until just combined.DO NOT OVER-MIX or protein powder will make the brownie dense.
Transfer batter into pan, smoothen with a spatula or back of spoon.
Bake for 30 minutes or until the top is set. Toothpick inserted into the center should come out slightly damp.
Remove from oven and let cool completely.
Birthday Cake Top:
In a bowl, mix Greek yogurt, protein powder and most sprinkles until smooth.Spread over cooled brownies.
Add more sprinkles on top.Cut into 16 pieces and serve!
Notes
For extra gooey brownies, remove at 25 minutes when the tester comes out slightly moist.
