Ingredients
⅔Large Sweet Potato, 150g
1cupChicken Breast, Cooked & Shredded, 80g
1cupBroccoli, Chopped, 90g
1½TbspGreen Onion, Thinly Sliced, 10g
1TbspGreen Bell Peppers, Chopped, 9g
1TbspRed Bell Peppers, Chopped, 9g
2TbspNon-Fat Greek Yogurt, 25g
1tspPaprika
½tspGarlic Powder
½tspChili Powder
½tspCumin
¼tspOnion Powder
¼tspBlack Pepper
¼tspCayenne Pepper
¼tspCrushed Red Pepper Flakes, Optional, for a spicier version
Spicy Greek Yogurt Sauce:
½cupNon-fat Greek Yogurt, 100g
¾tspPaprika
¾tspCrushed Red Pepper Flakes
Instructions
Preheat oven to 325°F, or use an Air-Fryer.
Pierce sweet potato with a fork, microwave for 5 minutes, and then mash.
Pulse broccoli in a food processor and until finely ground into “rice” form, or grate.
Finely chop the cooked chicken.
Blend spices together in a bowl.
Combine the mashed sweet potato, veggies, chicken and spices, mix well. Adjust the amount of spices if needed.
Add the greek yogurt and mix until smooth.
Divide the mixture into 4 parts, and use your hands to shape into flattened balls.
Air-Fry at 350°F for 15 minutes (or bake in the oven for 20 minutes) until golden brown.
In a small bowl, stir together ingredients for the sauce.
Dip patties in sauce or assemble as burgers and enjoy.
