Ingredients
2Eggs, or Liquid Egg Substitute
2TbspCheddar Cheese, Shredded, 14g
½cupSpinach, Chopped, 15g
½cupMushrooms, Sliced, 35g
2TbspRed Onion, Chopped, 20g
3TbspRed Bell Peppers, Chopped, 30g
⅛tspSalt
⅛tspPepper
Instructions
Preheat and lightly grease waffle iron with cooking spray.
In a large bowl whisk eggs, cheese and toppings. Season with salt and pepper.
Pour half the batter into prepared waffle iron. Do not fill all the way to the top or it will spill out. Spread toppings evenly.
Cook for about 3-4 minutes or according to manufacturer instructions.
Remove from waffle iron and repeat with remaining batter.
