Get two chia-ified desserts in one with these Banana Bread Brownies; A moist banana bread topped with a decadent brownie that’s Gluten-free, Paleo, Vegan and fiber-packed too!
Ingredients
Banana Bread:
1TbspChia Seeds, 14g
2½TbspWater
2mediumBananas, 1 cup Mashed, 240g
2TbspAlmond Butter, Creamy, Or other, 32g
2TbspApplesauce
½tspVanilla Extract
¼cup + 2 Tbsp Almond Flour, about 30g
2TbspCoconut Flour, about 14g
1tspBaking Powder
½tspCinnamon
Brownie:
1TbspChia Seeds, 14g
2½TbspWater
½cupAlmond Milk, or other
2TbspCoconut Oil, Melted
1tspVanilla Extract
⅔cupAlmond Flour
2TbspCoconut Flour
¼cupCacao Powder, or Unsweetened Cocoa
1tspBaking Powder
Stevia Sweetener, ⅓ cup sugar worth (Use your brand's Conversion Chart)
Instructions
Preheat oven to 350°F and line a 8x8” baking pan with parchment paper.
Banana Bread Batter:
Make chia egg: Combine chia seeds and water in a small bowl and set aside for 5 min.
In a large bowl, roughly mash banana with a fork.
Add chia egg, almond butter, applesauce and vanilla extract, and blend with a hand mixer on low till pureed, 20 seconds.
In a small bowl, combine and uniformly mix almond flour, coconut flour, chia seeds, baking powder and cinnamon.
Add dry ingredients to wet, and fold with a spatula until combined.
Brownie Batter:
Make chia egg: Combine chia seeds and water in a small bowl and set aside for 5 min.
In a large bowl, whisk together almond milk, coconut oil and chia egg.
In a small bowl, combine and uniformly mix almond flour, coconut flour, cocoa powder, baking powder and sweetener.
Add dry mix to wet and fold with a spatula until combined.
Bake and cool:
Pour banana bread batter into baking pan and smoothen out the top with the back of spoon or spatula.
Pour brownie batter over banana bread and smoothen out again.Top with some chocolate chips and chopped bananas if you'd like.
Bake for about 35 minutes or until a tester inserted into center comes out mostly dry.
