I saw a chocolate mousse cake at a friend’s birthday party and it looked so good, I had to give it a try. More like – I put a story vote on my Instagram and my audience was interested, so definitely had to give it a try!

This cake is a delightful fusion of rich, velvety chocolate combined with health-conscious ingredients, making it the perfect guilt-free indulgence. If you’re in search of a dessert that satisfies your sweet tooth without the excess calories and sugar, you’re in for a delicious surprise.

Ingredients for Healthy Chocolate Mousse Cake

This healthy chocolate mousse cake is layered with cake, and 2 mousses – real indulgence – but is made with clean ingredients you’ve definitely got in your pantry!

  • Chocolate Protein Powder needed for a high protein coffee and also replaces the ‘sugar’.
    I used Whey-Casein Chocolate protein powder from Quest Nutrition.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe. Quest Nutrition whey-casein again here.
  • Whole Wheat Pastry Flour
  • Coconut Flour
  • Unsweetened Cocoa Powder 
  • Hot Water
  • Unsweetened Applesauce
  • Some Lemon Juice
  • A bit of Melted Butter
  • Baking Soda
  • Vanilla Extract

For the Chocolate Mousse:

  • Non-fat Greek Yogurt for a high protein custard
  • Chocolate Protein Powder; I used Quest Chocolate protein powder; It’s whey-casein and blends well with the yogurt.
  • Chocolate flavored Instant Pudding Mix: I used this sugar free and fat free one from Jello
  • Unsweetened Cocoa Powder
  • A bit of Unsweetened Almond Milk

For the White Chocolate Mousse:

  • Non-fat Greek Yogurt for a high protein custard
  • Vanilla Protein Powder; This is the source of sweetness.I used Quest Vanilla here since it’s whey-casein and blends well with the yogurt.
  • White Chocolate flavored Instant Pudding Mix: I used this sugar free and fat free one from Jello
  • A bit of Unsweetened Almond Milk

And for the Top:

  • Unsweetened Cocoa Powder

How to make Protein Chocolate Mousse Cake

This protein chocolate mousse cake is really easy to make, and doesn’t need any fancy baking skills. Here’s what you have to do:

  1. Whisk all wet ingredients in a bowl – Hot water, applesauce, lemon juice, melted butter vanilla extract.
    Use hot water – it’s needed!
    Use melted butter so that it mixes well into the healthy chocolate crumb coffee cake batter.
  1. Whisk dry ingredients – flour, coconut flour, chocolate protein powder, unflavored protein powder, cocoa powder and baking soda.
  1. Add dry mix to wet; Whisk until just combined.
    Don’t over-mix or cake will get tough!
  1. Taste the batter and see if you need some extra sweetener.
    Use stevia powder to maintain the consistency of the batter and have healthy, sugar free chocolate protein cake.
  1. Pour batter into baking pan.
  2. Add sprinkle streusel on top.
  1. Bake for 18-22 mins.
  1. Stop baking when tester/knife comes out just dry, but moist.
    Don’t over-bake the cake or it will get tough.

Protein Chocolate Topping:

  1. Let cake cool before topping or the icing will melt.
  1. Whisk yogurt, chocolate protein powder, cocoa, chocolate pudding mix, milk
    Don’t add too much milk; It will come together quickly.
  1. Spread on cooled cake.

Protein White Chocolate Topping:

  1. Whisk yogurt, vanilla protein powder, white chocolate pudding mix, milk
    Don’t add too much milk; It will come together quickly.
  1. Spread on chocolate topping.
  1. Place in fridge 1 hour so the cake can cool and settle.
  2. Dust with Cocoa Powder and Slice!

How to store Low Fat Chocolate Mousse Cake

Properly storing your high protein low fat chocolate mousse cake is essential to maintain its freshness and flavor. Here are some guidelines to ensure your cake stays delicious:

Refrigeration: Triple chocolate mousse cakes contain dairy-based mousse, which should be kept in the refrigerator. After serving, refrigerate any leftover cake promptly. Consume within 5 days.

Cover: To prevent the healthy chocolate mousse cake from drying out or absorbing odors from the fridge, cover it securely. You can use a cake keeper, a cake box, or airtight plastic wrap or container.

Freezing (Optional): If you need to store the chocolate mousse cake for a more extended period, you can freeze it. Ensure the cake is tightly wrapped (in plastic wrap) to prevent freezer burn. Label it with the date to keep track of how long it has been stored.
When ready to enjoy, allow it to thaw in the refrigerator for a few hours before serving.

I recommend making this healthier chocolate mousse cake with the ingredients and brands recommended, but here’s some alternatives for you can try:

  • Whole Wheat Pastry Flour: Use All purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight not cups.
  • Unflavored Protein Powder: Use 2 tablespoon flour and ½ tablespoon extra coconut flour.
  • 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
  • Unsweetened Applesauce: Mashed Banana or Pumpkin Puree
  • Melted Butter: Melted Coconut Oil or Dairy Free Butter
  • Lemon Juice: Apple Cider Vinegar or White Vinegar
  • 1:1 Zero Calorie Sugar Replacement: Regular brown sugar or powdered sugar (this won’t be sugar free though, and also higher in calories)

Options for the Mousse Toppings:

  • Greek Yogurt: Use regular Greek Yogurt or Coocnut Yogurt
  • Almond Milk: Any other non-dairy or dairy-based milk
  • Sugar-free Pudding Mix: Regular pudding mix

Ingredients

  • 7 tablespoon Chocolate Protein Powder (Whey-casein), 40g
  • ⅓ cup Whole Wheat Pastry Flour, see post for subs, 40g
  • 2 tablespoon Unflavored Protein Powder, 11g, see post for subs
  • 2 tablespoon Coconut Flour, 14g
  • 2 tablespoon Unsweetened Cocoa Powder, 10g
  • 1 teaspoon Baking Soda
  • ¾ cup Hot Water, 180ml
  • ½ cup Unsweetened Applesauce, 120g
  • ½ tablespoon Melted Butter, 7g
  • 2 teaspoon Lemon Juice, 10ml
  • ½ teaspoon Vanilla Extract

Chocolate Mousse:

  • 1 cup Nonfat Plain Greek Yogurt, 225g
  • ⅓ cup Chocolate Protein Powder (Whey-casein), 30g
  • 1½ tablespoon Chocolate Pudding Mix, 10g, Sugar free
  • 2 tablespoon Cocoa Powder, 10g
  • 3 tablespoon Unsweetened Almond Milk, 45ml

White Chocolate Mousse:

  • 1 cup Nonfat Plain Greek Yogurt, 225g
  • ⅓ cup Vanilla Protein Powder (Whey-casein), 30g
  • 2 tablespoon White Chocolate Pudding Mix, 15g, Sugar free
  • ¼ cup Unsweetened Almond Milk, 60ml

Instructions

  • Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper.
  • In a bowl, whisk chocolate protein powder, unflavored protein powder, flour, coconut flour, cocoa powder and baking soda.
  • In a large bowl, whisk together hot water, applesauce, butter, lemon juice and vanilla.
  • Add dry mix to wet, and gently fold until just combined.
    DO NOT OVER-MIX or protein powder will make the cake dense.
  • Pour batter into pan, bake for 18-20 minutes.
    A tester inserted into the center should come out clean but moist.
  • Let cool for 10 minutes, transfer to cooling rack to cool completely.

Chocolate Pudding Top:

  • In a bowl, mix Greek yogurt, chocolate protein powder, cocoa powder, chocolate instant pudding, and milk until smooth.
    Add milk a little at a time until pudding consistency is reached.
  • Spread on cooled cake.

White Chocolate Pudding Top:

  • In a bowl, mix Greek yogurt, vanilla protein powder, white chocolate instant pudding, and milk until smooth.
    Add milk a little at a time until pudding consistency is reached.
  • Spread on chocolate pudding layer.
  • Place in fridge 1 hour, dust with cocoa powder and cut into 8 slices.
