Okay Im not gonna lie here, I actually didn’t have any leftover banana bread as such to make this recipe. I actually baked a loaf just so I could start a series of ‘things to do with banana bread’.

Well this definitely was worth it because I ended up having about ¼ of the batch in once go. No regrets.

What can I make with Leftover Banana Bread?

If you’ve ever baked too much banana bread and wondered what you can make with leftovers, or just “what can you do with baked banana bread” in general, this protein ball recipe is what!

A minimalistic recipe since the flavor and sweetness from the banana bread gets you almost all the way there.

You can also make thees banan bread snack balls with leftover banana muffins.

Ingredients for Leftover Banana Bread Protein Balls

Baked banana bread and 2 ingredients only for his simple and healthy protein bites recipe, making it the perfect homemade protein powder snack!

  • Baked Banana Bread; I’ve put my recommendations below
  • Vanilla Protein Powder – this is what makes it high protein truffles recipe. I’ve made some recommendations below.
  • Non-fat Plain Greek Yogurt 

What Banana Bread to use for Protein Bites:

You can bake these banana bread protein balls with any leftover banana bread you have; A classic, banana nut, chocolate, marbled, peanut butter, whatever the flavor may be.

For this particular recipe I used a store bough mix from Lakanto, since it’s a keto banana bread and sugar free.

What Protein Powder to use for Baked Banana Bread Balls ?

For this particular recipe, I used the Fudge Sundae flavor of  ProteinWorld Slender Blend; It’s a protein powder with added vitamins, minerals and a thermogenic blend for weight loss.

Vegan

For a Vegan banana bread balls recipe, use plant based protein powder (ProteinWorld has one too), coconut yogurt and a Vegan banana bread recipe.

How to make Baked Banana Bread Protein Balls

Once you have your baked banana bread, these protein balls really are extremely easy to make – a simple no bake, mix and roll recipe.

  • Crumble the banana bread in a large bowl. Use your hands and make fine crumbs; no large chunks or the mixture won’t mix well.
  • Add in the Greek yogurt and protein powder and mix well.
    Feel free to add more banana bread crumbles or protein powder if the mix is too wet; or yogurt if it’s too dry. Make it to your taste.
  • Spoon out some of the banana bread balls mix, about 1-3 tablespoon worth, and roll it using your (clean) hands.

To Store Banana Bread Protein Bites

These banana bread snack balls are best stored in the fridge since they have yogurt in the mixture.

To store banana bread protein bites in the fridge, keep in an airtight container for up to 1 week.

To freeze leftover banana bread protein balls, place in an airtight sealed container or freezer safe zipper bag for 2-3 months. Let them thaw on the counter before eating.

Ingredients

  • 4 slices Banana Bread, about 8oz, ⅓ loaf
  • ¼ cup Plain Greek Yogurt, 56g
  • 2 tablespoon Vanilla Protein Powder, 11g

Instructions

  • Crumble banana bread into large bowl using hands; Crumbs should be fine.
  • Add Greek yogurt and protein powder and mix.
    Add more yogurt if the mix is too dry or dry ingredients (to taste) if too wet.
  • Spoon out about 1-2 tablespoon of mixture at a time roll into balls.
