This was a really last minute recipe. I had no post planned, and this fudgy single serving peanut butter protein brownie was just too easy!

Mix all those ingredients in a bowl, pour into a ramekin and bake.

Ingredients for Half Baked Peanut Butter Protein Brownie

This single serve peanut butter protein brownie is made with a few simple and healthy ingredients, and has no butter or oil and no sugar either!

  • Chocolate Protein Powder for high protein brownie that’s also sugar free.
I used ProteinWorld Whey, but the ProteinWorld Slender Blend is another great option. Code HAYLSKITCHEN gets you a discount on both.
A third alternative would be Quest, but you would need more milk here since this is a whey-caesin blend.
  • Unsweetened Cocoa Powder or Cacao Powder
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Coconut Flour
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • A bit of Vanilla Extract
  • Baking Powder

And some Creamy Peanut Butter for topping!

If you need to add more sweetness, Stevia Powder or Zero Calorie Sugar Substitute; I use Lakanto, to keep this raw protein brownie batter recipe sugar free; (code HAYLSKITCHEN for a discount here too)

Tips to make Peanut Butter Protein Powder Brownie in a Mug

This fudgy peanut butter protein powder brownie really is an easy one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the brownie to come off easily.
Use an oven-safe mug if you need.
  • Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it,  protein powder will make your protein brownie tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Don’t overbake the brownie. The top will should be just cooked. It might look soft, but will harden when it cools a bit.
It will continue to cook when out, and you want the proper fudgy peanut butter brownie center.

Alternates for this Healthy Peanut Butter Brownie

I recommend making this single serving healthy peanut butter brownie using the ingredients and protein powder listed since it gives the best results.

If you need other options for the flours and such, here’s some alternatives for a healthy protein powder brownie for one:

  • Chocolate Protein Powder: Use Vanilla
  • Peanut Butter Powder: Use 1 tablespoon Creamy Peanut Butter, but also reduce the milk to maybe 3½ Tbsp.
  • Coconut flour: Try using about 3 tablespoon of Almond Flour
  • Egg Whites: 2 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Almond Milk: Any other milk

A Vegan Peanut Butter Fudge Brownie Recipe

This gooey peanut butter brownie recipe has no butter or milk and can easily be made Vegan too.

For the perfect Vegan peanut butter fudge brownie, make sure you use a plant based protein powder and aquafaba.

ProteinWorld has a Vegan protein blend that would work well here (HAYLSKITCHEN for the discount here too).

This was incredible! Even my husband loved it and he’s not usually a big fan of “protein” desserts. We topped it with some ice cream and it was ??

YAYYYY I’m so happy you and your husband both loved it Sydnee! I try to not get that “protein taste” in my desserts and keep them as real as possible. Hope you find some more good stuff to try here.
Can’t wait to hear about them all!
