With all the good stuff going on, this really is one beautiful load of goodness! 

What is this loaded monster cookie recipe?

A monster of a cookie which is a mashup of a peanut butter cookie, oatmeal cookie, chocolate chip cookie and M&M cookie in one! Really a good mashup here.

This version is definitely a lot healthier than the regular though.

Ingredients for Single Serve Protein Monster Cookie

This healthy single serve protein monster cookie has simple ingredients, and has no butter or oil and no extra sugar either; Just the m&ms.

  • Rolled Oats
  • Vanilla Protein Powder for healthy protein cookie that’s also low sugar
    I used Quest Nutrition Vanilla Milkshake protein powder here since its a whey-caesin blend and great for baking.
    HTLT Supps is another option.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cookie. Quest Nutrition whey-caesin again here.
  •  Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
  • An Egg White for extra protein
  • Some Peanut Butter: I used American Dream Nut Butter Monster Cookie Peanut Butter that’s higher in protein and lower in fat than normal ones!
  • Unsweetened Applesauce
  • Baking Powder

And then of course the mix-ins for M&M Protein Cookies:

  • Chocolate Chips; I use the chips from Lakanto here (HAYLSKITCHEN for a discount here too). 
  • M&Ms

Tips for Protein Powder Monster Cookie Recipe

This monster cookie recipe made with protein powder is a really easy dessert for one, but here’s some tips to get it perfect!

  • Make sure you use Rolled Oats and NOT instant or quick oats! The latter are too fine and will make the mix to soggy.
  • Use completely runny Peanut Butter so it mixes well with the oat mixture.
  • Mix the ingredients completely so you get a thick cookie dough – It should be like a thick batter.
  • Don’t let the oatmeal cookie mixture sit out too long or it will become too dense and make the cookie tough.
  • Stop baking when top is cooked; The cookie will cook while cooling, and overbaking will make it tough.

Store Jumbo Monster Cookie for One

This recipe makes a big jumbo monster cookie for one, and is best had fresh, but you can store it.

Keep the low fat monster cookie in an airtight container and keep on the countertop for up to 2 days, or fridge 5 days.

To freeze healthy single serve protein monster cookie, place in freezer-safe zipper bag and keep 1-2 months; Don’t forget to thaw before eating!

Alternates for this Healthy Monster Cookie Recipe

I recommend making this low sugar single serve healthy monster cookie using the protein powder and other ingredients and products listed – since it gives the best results.

If you need other options for the flours and such, here’s some alternatives:

  • Unflavored Protein Powder: Oat flour or Almond flour (also 1 Tbsp)
  • Peanut Butter Powder: 2 teaspoon Peanut Butter, but use only ½ tablespoon Applesauce
  • Egg Whites: 2 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though
  • Applesauce: Mashed Banana

This single serving low calorie monster cookie recipe has can easily be made Vegan with the right ingredients

For the perfect Vegan monster protein cookie for one, make sure you use a plant based protein powder and aquafaba instead of egg whites. Also use dairy free chocolate.

Ingredients

  • ¼ cup Rolled Oats, 22g
  • 2 tablespoon Vanilla Protein Powder, about 11g
  • 1 tablespoon Unflavored Protein Powder, 5g
  • 1 tablespoon Peanut Butter Powder, 7g
  • ¼ teaspoon Baking Powder
  • ½ tablespoon Peanut Butter, 7g, Monster Cookie flavor recommended below
  • 1 Egg White, 33ml
  • 1 tablespoon Unsweetened Applesauce, 14g

Mix-ins:

  • 1 teaspoon Chocolate Chips, 5g, Sugar-free recommended below
  • ½ packet fun-size M&Ms, 6-7g

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Combine all the dry ingredients in a bowl – oats, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
  • Add peanut butter, egg white, applesauce and mix.
  • Add in chocolate chips and M&Ms and mix again.
  • Transfer cookie mixture onto baking sheet, spread with spoon and shape into 5-6” circle.
  • Bake 10 minutes – top should be cooked and dry to touch, but soft.
  • Let cool for a few minutes and enjoy!

    These turned out great! I used almond butter because I didn’t have peanut butter and I also didn’t have powdered peanut butter so I just used vanilla protein powder for all of the different powder variations and that worked out. I ended up making several cookies instead of one large one because I wanted to have them for a snack before the gym, and these were perfect! The M&M version I did add vanilla extract. I also made a version with lemon extract and I used white chocolate chips!

    Update* I just received both matcha and thai tea protein powder from BobaProtein and made two additional cookie flavors, and I have to say they are fantastic!

    The Thai Tea cookie I did

    • 1 Egg white (33ml)

    • 1/4 cup Rolled oats
    Canned Goods
    • 1 tbsp Applesauce, Unsweetened
    • 1 tbsp Protein powder, Unflavored
    • 2 tbsp Thai Tea protein powder

    • 1 2 tbsp almond butter (7g
    • 1 tbsp black tea (ground)
    • 5 g 1 tsp salted caramel chips (trader joe’s)
    • 1/4 tsp Baking powder

    and the Matcha follows a very similar path to the lemon white chocolate:

    • 1 Egg white (33ml)

    • 1/4 cup Rolled oats
    Canned Goods
    • 1 tbsp Applesauce, Unsweetened
    • 1 tbsp Protein powder, Unflavored
    • 2 tbsp Matcha Tea protein powder

    • 1 2 tbsp almond butter (7g
    • 1 tbsp ceremonial matcha powder
    • 5 g 1 tsp white chocolate chips
    • 1/4 tsp Baking powder

      Meal prepping cookies is the way to go! Such a great idea to have it with fruit too!
