Serving size on these high protein baileys chocolate bites for me was about 4. No jokes here. The protein balls were so rich and indulgent, we had to fit in 4 at a time into our macros.

I made some variations with the crushed pecans and coconut flour coating, and hands down we both loved the coconut flour version best. A must try!

Ingredients for Baileys Protein Truffles

These healthy hot chocolate protein balls are made with simple ingredients like oat flour, protein powder and coconut flour, and are great for a healthy snack. Here’s all that goes in:

  • Whey-Casein Chocolate Protein Powder to add sweetness to these no sugar protein truffles.
    I used whey-casein Chocolate flavor from Quest Nutrition
  • Plant-Based (or Whey) Chocolate Protein Powder – I used Sprout Living Chocolate Maca Protein Powder.
    Prozis or Dymatize ISO are also good options for the Whey.
  • Baileys Irish Cream 
  • Unsweetened Cocoa Powder
  • Oat Flour (you can make your own with rolled oats in a high speed blender)
  • Coconut Flour
  • Unsweetened Almond Milk

And optionally for rolling:

  • More Coconut Flour
  • Crushed Pecans

Tips for Baileys Chocolate Truffles with Protein Powder

These Baileys chocolate truffles are made with protein powder for sweetness, and actually super easy – with no baking needed. Here’s some pointers to get it right.

  • Use whey-casein protein powder and plant-based protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of milk in this case.
  • Add more milk to mix if too dry, more coconut flour if too wet; Mixture should be handleable and rollable.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the mixture and have sugar free no bake baileys truffle recipe.
  • Use slightly damp hands to roll balls to prevent sticking to palms.

To store No Bake Baileys Protein Balls

These Baileys protein balls are best stored in the fridge since they do have a bit of milk in there.

To store Baileys protein bites, keep in an airtight container in the fridge for up to 1 week.

To freeze, place Baileys chocolate truffles in an airtight sealed container or freezer safe zipper bag, and freeze for 2-3 months. Let them thaw on the counter before eating!

Alternate ingredients for Healthy Baileys Protein Bites

I made sugar free, gluten free and healthy Baileys protein bites with ingredients above, but here’s some other clean ingredients you can try.

  • Oat flour: Almond flour
  • Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
  • Chocolate Protein Powder: Use Vanilla
  • Almond Milk: Regular milk or other non dairy milk

Ingredients

  • ⅓ cup Oat Flour, 30g
  • ¼ cup Chocolate Protein Powder, Whey-casein, 22g
  • ¼ cup Chocolate Protein Powder, Plant-based, 22g (or more Whey-casein)
  • ¼ cup Unsweetened Cocoa Powder, 20g
  • ¼ cup Coconut Flour, 28g
  • ¼ cup Unsweetened Almond Milk, 60ml
  • 3 tablespoon Baileys Irish Cream, 45ml

Coating:

  • Crushed Pecans
  • Coconut Flour

Instructions

  • In a bowl, mix oat flour, chocolate protein powder, cocoa powder and coconut flour.
  • Add Baileys Irish Cream and almond milk (little at a time) and mix.
  • Add more milk if the mix is too dry or coconut flour if the mix is too wet.
  • Divide into 12 portions.
    Roll into balls.
  • Roll in crushed pecans or coconut flour, shake off excess and set aside.

    The Bailey Protein Truffles are so good and so easy to make. I love that the calories are low for a single one so I can always fit one (or two) into my macros and feel like I had dessert!
