First one was a fail, but man these protein Cadbury egg blondies turned out amazing the next time! So soft and just the perfect amount of mini eggs in there. 

Another fun backstory – I was waiting for a new protein powder for this recipe, and wanted to finish all the mini eggs I had left. Turned out my husband had been having these over the last few weeks and said I might need to half-batch the recipe coz there might not be enough.

I needed 100g, and there was exactly 100g of the mini Easter eggs left! Real magic blessing there!

Ingredients for Mini Egg Protein Blondies:

These mini egg protein blondies are made with a clean ingredients and have no sugar outside of the Cadbury mini eggs. There’s also no butter and no eggs in this recipe!

  • Vanilla Protein Powder needed for high protein blondie and also replaces most of the ‘sugar’.
    I recommend part whey-casein Vanilla protein powder from Quest Nutrition.
    And part whey Vanilla from Dymatize for this recipe.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb higher protein blondie; Quest Nutriton Multi-purpose here.
  • Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
  • Whole Wheat Pastry Flour – or a regular all purpose flour
  • Zero Calorie Brown Substitute – I use Lakanto, to keep this recipe sugar free;  (code HAYLSKITCHEN for a discount here too)
  • Non-fat Greek Yogurt
  • Almond Milk or regular milk
  • Baking Soda
  • Vanilla Extract
  • Blondie-flavor Almond Butter

  • Cadbury or Hershey’s Mini Eggs

How to make Mini Egg Blondies with Protein Powder?

This recipe for low fat and low calorie protein powder mini egg blondies is extremely easy to make; just mix and bake!

Here’s what it takes:

  1. Preheat your oven to 350°F and line a baking pan (about 8”) with parchment paper.
  1. Whisk all the dry ingredients in bowl – whey and whey-casein protein powders, flour, almond butter powder, baking soda.
  1. Whisk the wet ingredients in a large bowl – yogurt, milk, brown sugar, vanilla
  1. Add the dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
    You should have a thick batter. (Taste batter and add stevia powder if you want it sweeter)
  1. Add in most mini eggs and fold to combine. 
  1. Transfer the batter into pan(greased and parchment-lined), spread, top with more mini eggs and bake for about 25 minutes.

How to know when protein Easter blondies are ready?

Easter protein blondies are ready when the top is completely set and dry, and a tester (toothpick or thin sharp knife) comes out mostly dry.

For extra fudgy Easter blondies, let some moisture be there on the tester – this should be at about 22 minutes.

Wait until cool!

Don’t cut too soon or they will be too soft.

Tips for Perfect Easter Protein Blonides

  • Use room temperature milk and yogurt;
    This is so the wet ingredients and dry ingredients can mix well.
  • Whisk dry ingredients together first so you have a smooth batter.
  • Use Creamy Almond Butter also so that it mixes well into the batter
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the protein powder will make the Cadbury egg blondies tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy Easter blondies.
  • Don’t over-bake or blondies might get tough; Remove when the tester/knife comes out mostly dry.
    Underbaking a little is okay.

Alternatives for Healthy Easter Egg Blondies

For the perfect low fat but moist protein blondies, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.

  • Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight; not cups.
  • Unflavored Protein Powder: 20g more Flour, but also reduce yogurt to 1¼ cup (281g)
  • Greek Yogurt: Coconut Yogurt
  • Almond Milk: Any other milk 
  • 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
  • Almond Butter: Cashew Butter or any nut or seed butter.

How to store Easter Egg Protein Blondies?

This high protein Easter egg blondie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!

Store fudgy Easter protein powder brownies at room temperature in an airtight container for 1-2 days or in the fridge for a week.

To freeze Cadbury Egg protein blondies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Ingredients

  • ¼ cup Whey-Casein Vanilla Protein Powder, 23g
  • ¼ cup Whey Vanilla Protein Powder, 23g
  • ½ scoop Unflavored Whey-Casein Protein Powder, 15g
  • ⅓ cup Almond Butter Powder, 32g
  • ¼ cup Whole Wheat Pastry Flour, 30g, see post for subs
  • 2 tablespoon Zero Calorie Brown Sugar Replacement, 24g
  • ⅓ teaspoon Baking Soda
  • 1⅓ cup Nonfat Plain Greek Yogurt, 300g
  • 6 tablespoon Unsweetened Almond Milk, 90ml
  • 3 tablespoon Almond Butter, 48g, Blondie flavor recommended below
  • 1 teaspoon Vanilla Extract
  • 100 g Mini Eggs, Chopped

Instructions

  • Preheat oven to 350°F and line an 8” x 8” baking pan or baking dish with parchment paper.
  • In a bowl, whisk vanilla protein powders, almond butter powder, unflavored protein powder, flour, brown sugar replacement and baking soda.
  • In a large bowl, whisk together Greek yogurt, almond milk, almond butter and vanilla.
  • Add dry mix to wet, and gently fold until just combined.
    DO NOT OVER-MIX or protein powder will make the blondies dense.
  • Add in most of the chopped mini eggs and fold.
    Batter should be thick.
  • Top with more mini eggs, transfer batter into pan, smoothen with a spatula or back of spoon.
  • Bake for 25-27 minutes or until the top is set. Toothpick inserted into the center should come out slightly damp.
  • Remove from oven and let cool completely.
    Cut into slices and enjoy!
