I saw way too many people make these mini egg nest recipes on Instagram over the last 3 weeks, so I decided to finally give it a shot. It actually turned out way easier than I expected!

They turned soft over time, but that chocolate spread mixture was so rich, it completely worked out! Especially with the crunch of the mini eggs on top. 

Ingredients for Protein Easter Egg Nests Cookies:

These healthy and high protein Easter Egg nests cookies are made with 5 simple ingredients you already have in your pantry around Spring time:

  • Chocolate Protein Powder for high protein Easter Egg Nest recipe; I used Isopure 100% Whey Isolate for this recipe here.
  • Cornflakes Cereal

  • Cocoa Powder
  • A bit of Water
  • Mini Eggs!

How to make Healthy Mini Egg Nests with Protein Powder

As delicious as they are, making these no-bake healthy mini egg nests with protein powder is just as easy. Here’s what it takes:

  1. Make the Spread:
    Stir together protein powder, cocoa powder, almond butter and water (adding a little bit at a time). This creates a luscious and creamy chocolate spread for your healthy mini egg nest cookies.
  2. Mix the Cornflakes:
    Add in the cornflakes cereal. Mix with a spoon.
  1. Make the nests:
    Line a baking sheet or plate with parchment paper.
    Make mounds of the mixture on sheet and press a depression in the center; The mix will be sticky, so be vigilant. I made 10 bites.
    Place 2 mini eggs on top of each ‘nest’.
  1. Freeze:
    Freeze about 5 minutes and enjoy!

These healthy mini egg nest bites make a great snack for an Easter party. Here’s how to keep extras:

  • Room Temperate:
    These no bake Easter egg nests must be kept in an airtight container, and keep 3-4 hours outside.
  • Fridge:
    Store these in the fridge in an airtight container up to 5 days.
  • Freezer:
    For a long term option, keep mini egg nests in a freezer-safe zipper bag or container for 2-3 months.
    Thaw on the counter for a few minutes before eating.

Alternate ingredients for Easter Egg Nests with Cornflakes

These easter egg nests are made with cornflakes cereal and chocolate protein powder, but here’s some alternate ingredients you can try:

  • Cornflakes Cereal:
    Replace the cornflakes with rice krispies cereal, crushed pretzels, shredded wheat or even Cheerios! Use the same amount in cups.
  • Chocolate Protein Powder:
    Use vanilla protein powder instead of chocolate, but also add maybe ½ teaspoon extra cocoa powder.
  • Almond Butter:
    Peanut Butter, Cashew Butter, Hazelnut Butter or any other nut or seed butter would do just as well!
  • Mini Eggs:
    Instead of Cadbury or Hershey’s mini eggs, you could use Whopper Robin Eggs instead too.

Ingredients

  • ⅔ cup Chocolate Protein Powder, 60g
  • 2 teaspoon Almond Butter, 10g
  • 3 tablespoon Cocoa Powder, 15g
  • ¼ cup Water
  • 2 cup Cornflakes Cereal, 60g
  • 20 Mini Eggs, 70g

Instructions

  • Combine chocolate mix ingredients – protein powder, almond butter, cocoa powder, water – in a bowl (add water little at a time) to form thick spread.
    Taste and add sweetener if needed.
  • Add cornflakes cereal; Gently mix with a spoon.
  • Drop spoonfuls onto parchment-lined baking sheet; About 10 portions.
    Shape into a nest with a depression in the middle; Mix will be sticky, so be quick, and wet fingertips a little.
    Place 2 mini eggs in each nest.
  • Freeze about 5 minutes.
