A protein brownie for one made in the air fryer in under 10 minutes. Probably the most quick fix dessert. Okay I guess microwave recipes are faster, but come on, can you say no to a brownie like this?

Just mix everything up and air fry it. I was actually surprised how little time this took coz it literally was just 6 minutes in there.

This solo air fryer brownie recipe is definitely happening again!

Ingredients for Air Fryer Protein Brownie Recipe

This single serving air fryer protein brownie is made with a few simple and healthy ingredients, and has no butter or oil and no sugar sugar either! 

  • Chocolate Protein Powder for high protein brownie that’s also sugar free.
    I used Quest Chocolate Milkshake flavor since its whey-casein and bakes well.
  • Unsweetened Cocoa Powder or Cacao Powder
  • Coconut Flour
  • An Egg White
  • Unsweetened Almond Milk
  • A bit of Vanilla Extract
  • Baking Powder

Tips to make Air Fryer Protein Fudge Brownie

This air fryer protein fudge brownie really is an easy one, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin!
  • Use room temperature egg whites and milk;
    This is so the wet ingredients and dry ingredients can mix well.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it,  protein powder will make your protein brownie tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Take the brownie out when tester is still moist – it will continue to cook when out, and  you want the proper fudge brownie center.

Alternates for this Air Fryer Protein Powder Brownie for One

I recommend making this a protein powder air fryer brownie using the ingredients and products listed – especially the since it gives the best results.

If you need other options for the flours and such, here’s some alternatives for a healthy brownie for one:

  • Coconut Flour: Use 3-4 tablespoon Oat flour or Almond Flour.
  • Chocolate Protein Powder: Use vanilla.
  • Almond Milk: Any other milk
  • Egg Whites: 3 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.

Update: A reader has successfully made this with oat flour instead of coconut flour.

A Vegan Protein Brownie Recipe

This air fryer chocolate protein brownie recipe can easily be made Vegan too.

For the perfect Vegan protein brownie, make sure you use a plant based protein powder, coconut yogurt, aquafaba and dairy free chocolate chips.

Update: A reader has successfully made this with Vegan protein powder and egg substitute.

To make the air fryer protein brownie in the oven, bake at 350°F for about 12 mins.

Ingredients

  • ¼ cup Chocolate Protein Powder, Whey-casein, 22g
  • 2 tablespoon Unsweetened Cocoa Powder, 10g
  • 1 tablespoon Coconut Flour, 7g
  • ¼ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • 1½ Egg White, 45g
  • ¼ teaspoon Vanilla Extract
  • 1 teaspoon Chopped Chocolate or Chocolate Chips, Sugar free recommended, 5g

Instructions

  • In a bowl, chocolate protein powder, cocoa powder, coconut flour and baking powder.
  • Add almond milk, egg white and vanilla, and mix.
  • Fold in the chocolate chips.
  • Grease a 1 cup ramekin with cooking spray, transfer batter in, smoothen with a spatula or back of spoon and top with chocolate chips.
  • Cook at 325°F for 6 minutes (longer for less fudgy).
  • Let cool for a few minutes and enjoy!

    I love single-serving protein desserts (I don’t have to share, and I find protein desserts don’t keep as long as traditional desserts because of their higher protein and lower sugar content). This was easy and I actually made it a skillet brownie in a cast iron skillet in the oven (baked for about seven minutes at 350). I just found it a bit too “eggy” for the texture so I’m going to try again with only 15 g of egg white and add 30g of unsweetened almond milk to keep the total liquid content of the batter the same.

    Sooo good!! I had to substitute a few things because I didn’t have them- I used vegan soy isolate protein (salted caramel), oat flour instead of coconut flour, and one ogran vegan egg. This made it vegan also!! It turned out so amazing, really fudgey and chocolatey and so quick. The low calories also means this is now my absolute favourite healthy dessert?

    I made this one tonight! It is definitely my second favorite brownie recipe (collagen brownies are first!)! Tonight I realized one of the things I love about these recipes are the ingredients are always things I have on hand. I just peruse the website and choose a recipe and go to the cabinet! So easy!

      You really are in the right place Amber; I’m so happy you caught on this. I’m not too big a fan of fancy ingredients and only have the basic stuff on hand as well. Makes things a lot easier to implement.

      And this air fryer brownie is one of my favs too – the fudgy collagen brownie really is hard to compare to!
