That post workout dessert is exactly how this oatmeal protein cookie happened in the air fryer. I needed to get those carbs and protein in ASAP after the workout and really didn’t want to wait to preheat the oven.

So literally mixed up the ingredients and ‘cooked’ a single serve protein cookie in the air fryer all in like 10 minutes. (Perfect amount of time for me to heat up my big bowl of oats that I ate before this cookie of course)

But this really turned out nice so I planned and recreated it another evening just so I could do a shoot and share it too!

Ingredients for Healthy Air Fryer Protein Cookie for One

This air fryer oatmeal protein cookie recipe has just 6 healthy ingredients; no egg, no butter, no oil and no sugar either! A great vegan protein cookie recipe.

  • Instant or Quick Oats; Gluten free if needed. See tips for using rolled oats
  • Vanilla Protein Powder for high protein air fryer cookie, and also replace the sweetener.
    I recommend Quest Vanilla for this recipe to keep it sugar free.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein single serve cookie. I use the Multi-purpose mix protein powder from Quest Nutrition.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend PbFit for a sugar free version.
  • Unsweetened Applesauce
  • Baking Powder

And then of course.. Chocolate Chips! I’d recommend the sugar free ones from Lily’s.

How to make Single Serving Protein Cookie in the Air Fryer

Making high protein air fryer cookies is really is a quick and easy process since you just make the cookie dough and cook. No chill time needed.

  1. Preheat the airfryer to 325°F.
  2. Process the oats, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder in a bowl.
  1. Add in the unsweetened applesauce (1 tablespoon at a time) and mix. You will have a thick single serve protein cookie mixture.
  1. If using chocolate chips, add in most of them, leaving some for the topping later.
  1. Line air fryer basket with parchment paper.
  1. Transfer protein cookie dough on parchment paper and shape it into a big giant cookie for one.
    Sprinkle on more chocolate chips and press.
  1. Cook or bake the air fryer cookie for 6 minutes. Top should be lightly browned.
  1. Lift cookie out of air fryer based using parchment paper.
  2. Let it cool a bit, and indulge!

Alternates for Single Serve Air Fryer Protein Cookie

I recommend making this giant protein cookie recipe using the ingredients and products listed – especially the protein powder brands – since it gives the best results.

If you need other options, here’s some alternatives for air fryer oatmeal protein cookies:

  • Unflavored protein powder: Almond flour or Oat flour
  • Peanut Butter Powder: Almond butter powder or Cashew Butter Powder.
    You can also use regular peanut butter, but also reduce the applesauce to 35g.
  • Applesauce: Use mashed banana or pumpkin puree (but this would also change the flavor a little.

A Single Serve Vegan Protein Cookie

This air fryer protein cookies recipe has no eggs so can easily be made Vegan too.
For the perfect eggless protein cookie, make sure you use a plant based protein powder and dairy free chocolate chips. KOS has a Vegan Vanilla and Unflavored protein blend as well.

Mix-ins for Giant Protein Cookie Recipe

This healthy air fryer protein recipe makes a giant oatmeal cookie, so I went for chocolate chips in the cookie batter.

For some more options, you can mix in some chopped nuts – walnuts, almonds, pistachios – or may be even some seeds – cashew or pumpkin are good options.

Ingredients

  • ¼ cup Rolled/Instant Oats, 22g
  • 2 tablespoon Vanilla Protein Powder, 11g
  • 1 tablespoon Unflavored Protein Powder, 5g, see post for subs
  • 1 tablespoon Peanut Butter Powder, 6g, see post for subs
  • ¼ teaspoon Baking Powder
  • 2 tablespoon Unsweetened Applesauce
  • 2 teaspoon Chocolate Chips, 10g, Optional, Sugar free recommended

Instructions

  • Preheat the air fryer to 325°F.
  • In a bowl, combine oats, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
  • Add in unsweetened applesauce (1 tablespoon at a time) and mix. Mixture should be smooth, but still thick.
  • Fold in chocolate chips, reserving a few.
  • Line air fryer basket with parchment paper.
  • Transfer cookie mixture, spread with spoon and shape.
    Sprinkle on remaining chocolate chips and press down.
  • Cook at 325°F for 6 minutes top should be lightly browned and dry to touch.
  • Lift out of air fryer basket using parchment paper, let cool for a few minutes and enjoy!

    I made this for breakfast yesterday! Not only packed with nutritious ingredients, but the taste was sooo good! I’ve tried a few single serving cookie recipes but this is the best so far! I’d love if you make more healthy dessert recipes, especially in the airfryer ?

    We made this tonight because I was craving a treat, and HOLY COW this was amazing! I used a chocolate and vanilla protein powder instead of unsweetened and added some vanilla ice cream. My son, who’s extremely picky ended up eating the majority of the cookie and couldn’t tell that it was a healthier version. Thank you!!
