Blender pancakes are all the rave right now, but I was way too skeptical to try them.

Whenever I think of pancakes and pancake batter, I think of “batter will be lumpy” and “do not over-mix”, because that’s what’s you need to keep in mind to make sure pancakes actually rise.

And of course, using a blender ignores both those factors.

Somehow though, maybe it’s the eggs, these pancakes actually work!

The pancakes are super light, both in terms of consistency and calories, and I would say all those 8 pancakes would work for a single serving.

With low fats and high protein, they’re also quite a sweet way to treat yourself after a heavy workout.

We tried this one morning with the family. Prep was super easy and they came out really nice and fluffy! They were a big hit and next time we’re going to try them with blueberries.

    Highly recommended!

Blender pancakes really are the easiest! Great idea with the blueberries, would love to know how that turns out too.
