Okay after making this recipe I now realized I could have gone for a quadruple Biscoff in these protein cookies if I’d used the cookie butter in the dough instead of peanut butter powder.

But I guess we have the protein powder in the cookie butter flavor so maybe that counts?

Either way, this was one rich Speculoos cookie butter cookie!

Ingredients for Biscoff Stuffed Protein Cookies

This healthy biscoff stuffed protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar either! A great vegan protein cookie recipe too.

  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Lotus Biscoff Biscuits aka Biscoff Cookies
  • Vanilla Protein Powder for high protein cookie recipe, and also replace the sweetener.
    I recommend the Quest Vanilla since it’s whey-casein and bakes well.
  • Unflavored Protein Powder to replace some of the flour; Quest Nutrition Multi-purpose here.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Non-fat Greek Yogurt contributes to the oil-free part of these chocolate protein cookies since it adds the moisture, and also extra protein 
  • Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
  • Baking Powder

And then of course for the filling.. 

  • Biscoff Cookie Butter I use Cookie Butter Spread from ChocZero here, but you can also use the regular Lotus Biscoff butter spread or Speculoos cookie butter too.

How to make a Cookie Butter Protein Cookie with Biscoff Spread

This Biscoff explosion cookie really is easy to make – just free the Speculoos Cookie butter, mix the dough, spread it out (layering the Biscoff spread in the middle), and then bake.

  1. Spread Biscoff Cookie Butter Spread on a parchment lined plate and place in freezer for 15-20 mins to harden.
  1. Preheat your oven to 350°F and line a baking pan with parchment paper.
  1. Mix your ingredients – first dry, then add wet.
  1. Transfer ½ protein cookie dough onto the baking sheet in a round cookie shape.
  1. Spread frozen Speculoos cookie butter in the middle to make the Biscoff lava protein cookie center.
  1. Cover with remaining protein cookie dough and shape it into a giant protein cookie for one.
  1. Bake for 10 min. You might need a minute extra; make sure the top is completely dry to touch.

Let it cool a bit, and indulge!

Tips for Single Serving Speculoos Cookie Butter Protein Cookie

  • Let the biscoff spread harden a little before you put it into the cookie batter or it will be too runny.
  • Make sure the milk and yogurt are at room temperature to prevent the nut butter from clumping.
  • Let cookie dough cool! The dough will otherwise spread too much when baking and not give you the soft inside when done.
  • Don’t over-bake the cookie; Let cook until the top is just cooked and soft; too long and you might end up with a rough and dry texture.

Alternates for this Healthy Biscoff Explosion Cookies with Protein Powder

I recommend making this Biscoff protein powder cookie using the ingredients and products listed – especially the since it gives the best results.

If you need other options for the flours and such, here’s some alternatives for a good biscoff stuffed protein cookie:

  • Oat flour: Whole wheat pastry flour, all purpose flour or 1:1 Gluten-free baking flour in the same amount by weight.
    You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it.
  • Unflavored Protein Powder: More flour
  • Peanut Butter Powder: Use real peanut butter, but reduce amount of milk
  • Almond Milk: Regular non-dairy milk
  • Greek Yogurt: Coconut Yogurt 

A Vegan Biscoff Protein Cookie Recipe

This single serve biscoff lava protein cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.

Ingredients

  • 1 tablespoon Cookie Butter Spread, 16g, sugar-free recommendation below
  • 2½ tablespoon Oat Flour, 14g, see post for subs
  • 1 Crushed Biscoff Biscuit, 8g
  • 1½ tablespoon Vanilla Protein Powder, Whey-casein, 8g
  • 1 tablespoon Unflavored Protein Powder, Whey-casein, 6g
  • 1 tablespoon Peanut Butter Powder, 6g
  • 1 tablespoon Non-fat Plain Greek Yogurt, 14g
  • 1 Tbsp + 2 tsp Unsweetened Almond Milk, 25ml
  • ¼ + ⅛ teaspoon Baking Powder

Instructions

  • Spread Biscoff cookie butter on parchment lined plate in small circle and place in freezer for 15-20 mins.
  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Combine dry ingredients in a bowl – oat flour, crushed biscoff biscuit, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
  • Add in Greek yogurt and almond milk (little at a time).
  • Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.
  • Place cookie butter in the middle. Cover with remaining cookie mixture and shape.
  • Bake about 10 minutes – top should be cooked and dry to touch.
    Let cool for a few minutes and enjoy!
