Chocolate Cherry Protein Ice Cream Cups – Easy, Sugar Free!

Easy Chocolate Cherry Protein Ice Cream Cups with a chocolate cherry nut bar base, chocolate protein pudding mix ice cream and cherry on top – simple, healthy, sugar free recipe with no ice cream maker!

Okay not gonna lie, when I tried to come up with a simple recipe to use the chocolate cherry nut bars I got, this was the easiest. I wasn’t sure how it would come together, but these ice cream cups were supremely good!

Crunchy and chewy on the bottom, with the smooth creamy chocolate protein ice cream on top. 

The best part though, it’s made with just 4 simple ingredients – and the cherry on top!

Ingredients for Chocolate Cherry Protein Ice Cream Cups

These chocolate cherry protein pudding cups are made with clean ingredients like oat flour, coconut flour, protein powder and collagen powder, and are great for a healthy snack. Here’s all that goes in:

  • Chocolate Cherry Nut Bar: I used the one from NICK’s
  • Chocolate Protein Powder for high protein pudding recipe.
    I use the whey-casein from Quest Nutrition.
  • Chocolate Instant Pudding Mix: I used this sugar free and fat free one from Jello
  • Unsweetened Almond Milk

How to make Cherry Chocolate Pudding Cups with Protein Powder

This cherry chocolate protein ice cream recipe doesn’t need an ice cream maker. Just mixing and freezing.

  1. Break nut bars into half. It doesn’t have to be perfect.
  2. Press down bar on base of silicon molds or muffin tin (line with cupcake liners so they come off easily).
  3. Mix chocolate protein powder, pudding mix and milk in bowl.
    Add milk little at a time until smooth.
  4. Divide mix on top of base.
    Smoothen top with spatula.
  5. Add chopped cherry pieces on top.
  6. Place in freezer for 1 hour.
  7. Remove from cups and enjoy!

Tips to make Chocolate Cherry Protein Ice Cream with Pudding Mix

Here’s some pointers to make the perfect cherry chocolate pudding cups with protein powder and with pudding mix.

  • Use cupcake liners on muffin cup if using a muffin pan.
  • Press down bar onto the bottom of the bold or muffin cups to get a smooth base.
  • Use whey-casein protein powder since it works well with the ratio of ingredients here.
    If you use a whey protein powder, you might want to reduce the amount of milk to make it less.
  • Add milk a little at a time so the mix doesn’t get too runny.
  • Taste mix for sweetness; Add stevia if needed.

To Store Chocolate Cherry Pudding Cups

Chocolate cherry pudding cups must be stored in the freezer; Place in airtight container or freezer-safe zipper bag for 2-3 months.

Defrost in microwave about 1-2 minutes before eating.

Alternate ingredients for Healthy Chocolate Cherry Ice Cream Bites

I made sugar free, gluten free and healthy chocolate cherry ice cream bites with the ingredients above, but here’s some other clean ingredients you can try.

  • Chocolate Pudding Mix: Use vanilla flavor
  • Almond Milk: Any other milk
  • Nut Bar: KIND Bar or other snack bar

Ingredients

  • 4 Nut Bars, Chocolate Cherry flavor, Recommendation below
  • 1⅓ cup Chocolate Protein Powder, Whey-Casein, 120
  • 2 tablespoon Chocolate Instant Pudding Mix, 15g, Sugar free
  • 1 cup Unsweetened Almond Milk, 240ml
  • 2 tablespoon Cherries, Pitted, 50g

Instructions

Base:

  • Break nut bar into halves and press down onto base of 8-cup silicon mold (or lined muffin pan).

Chocolate Ice Cream:

  • In a bowl mix chocolate protein powder, pudding mix and milk (add little at a time until thick).
  • Divide mix among cups.
  • Top with chopped cherry pieces.
  • Freeze 1 hour, then remove from molds and enjoy.
