Chocolate chip cookie and potato chips with the sweet and salty really go so well together, I had to put them into this protein bar recipe. Real goodness here!

And a really easy recipe to execute too. A great meal-prep snack or dessert or post-workout treat in this recipe. All the protein and the peanut butter and chocolate chips with a touch of fancy with the potato chips!

Ingredients for Potato Chip Chocolate Chip Protein Bars

These chocolate chip potato chip protein bars are made with clean ingredients like protein powder, peanut butter powder and oat flour, and have sugars! A great healthy protein bar recipe.

  • Vanilla Protein Powder for healthy protein cookie dough base that’s also sugar free
    I used Whey-Caesin Vanilla protein powder from Quest Nutrition.
  • Unflavored Protein Powder to replace some of the flour and drop some carbs. I use Quest Nutrition’s Multi-purpose Mix Whey-Casein protein powder.
  • Oat Flour
  • Coconut Flour
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Unsweetened Almond Milk
  • Sugar free Chocolate Chips or chopped Chocolate – I use monk fruit sweetened ones from Lakanto here (HAYLSKITCHEN for a discount here). Lily’s is another sugar-free option!

And for the chocolate topping:

  • Chocolate – I use sugar free ones from Lakanto here again (HAYLSKITCHEN for a disocount here too). Or Lily’s
  • A bit of Coconut Oil

And then the crunch and potato chip protein bars part:

  • Potato Chips – I recommend the kettle cooked or reduced fat ones

Tips for No Bake Chocolate Chip Cookie Protein Bars

This chocolate chip cookie protein bar recipe is really very easy to make – just layer on the cookie dough, chocolate topping and potato chips!

Here’s some pointers to get it right though.

  • Add milk only a little at a time or the mixture will be too runny.
  • Mix the dry ingredients well before adding in the wet so you have a smooth mix.
  • Melt the chocolate in intervals so it doesn’t burn!

To store Cookie Dough Protein Bars

To store cookie dough protein bars, place in an airtight container and keep on the counter for up to 3 hours, and in the fridge for up to a 1 week. 

Keep these chocolate chip protein powder bars refrigerated or in the freezer so they stay fresh and last longer.

To freeze, place peanut butter chocolate chip protein bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; Protein bars should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!

Alternatives for Healthy Potato Chip Protein Bars

I made these sugar free and gluten free and low calorie healthy potato chip protein bars with this particular ingredient list, but here’s some options to choose from.

  • Oat Flour: Almond flour, or heat-treated flour (don’t forget to heat-treat, raw flour is not good)
  • Unflavored Protein Powder: More Oat flour or Almond Flour, but also reduce the milk to about ½ cup – ⅔ cup (add little at a time)
  • Peanut Butter Powder: Use ⅓ cup Creamy Peanut Butter, but also reduce the milk to maybe ⅔ cup.
  • Almond Milk: Regular milk

Ingredients

  • 1 cup Oat Flour, 90g
  • ¾ cup Coconut Flour, 84g
  • ⅔ cup Vanilla Protein Powder, Whey-casein, 60g
  • ⅔ cup Unflavored Protein Powder, Whey-casein, 60g
  • ½ cup Peanut Butter Powder, 48g
  • ¾ cup Unsweetened Almond Milk, 180ml
  • 3 tablespoon Chocolate Chips, Sugar free recommended below, 42g

Topping:

  • 2½ oz Chopped Chocolate or Chocolate Chips, Sugar free recommended, 42g
  • ¼ teaspoon Coconut Oil
  • ¾ oz Potato Chips, Reduced Fat recommend

Instructions

  • Prepare an 8” x 8” pan or baking dish.
  • In a bowl, combine protein powders, oat flour and coconut flour, peanut butter.
  • Add milk (little at a time) to form a dough.
    Add chocolate chips and mix.
  • Transfer to pan, and use back of spoon/spatula to press down and spread.

Topping:

  • Place the chocolate and coconut oil in a microwave safe bowl and microwave at 30 second intervals, stirring – for about 45 seconds – 1 minute until completely melted.
    Let cool slightly.
  • Spread over bars.
  • Crush potato chips and sprinkle on bars.
  • Place in freezer 5 minutes to cool.
  • Lift out of pan, place on cutting board and using a sharp knife, slice into 12 bars.
