Very quick fix dessert here because the ‘sugar’ cravings are real. No sugar in these chocolate chip toaster pastries though, but definitely all the craving satisfaction.

This healthy chocolate chip protein pop tarts recipe has just a few simple ingredients, and is perfect for a single serve gluten free, sugar free and Vegan protein powder treat.

Here’s what you need for healthy chocolate chip protein toaster pastries:

For the Chocolate Chip Protein Powder Pop Tarts Dough

  • Oat Flour (you can make your own with rolled oats in a high speed blender)
  • Chocolate Protein Powder for high protein pop tart, and also replace the sweetener.
    I used Quest chocolate, which is a whey-caesin blend.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Non-fat Greek Yogurt contributes to the high protein part of these homemade pop tarts.
  • Chocolate Chips: I use the sugar free one from Lakanto here (same code HAYLSKITCHEN for a discount)

  • A bit of Coconut Oil
  • Chocolate Protein Powder I recommend the same here too: Quest.

  • Almond Milk

Tips for Homemade Chocolate Chip Pop-Tart with Protein Powder

This healthy chocolate chip protein pop-tart really is an easy homemade pop tart recipe, and here’s some tips to make sure you get it right!

  • Process the dry ingredients first (oat flour, protein powder and peanut butter powder)
  • Use cold yogurt so that the dough does not get too sticky and hard to roll.
  • Don’t over-mix the dough or it will get too warm and soft. 
  • Chop the chocolate chips so the dough is easier to roll.
  • Don’t let dough sit out for too long; Work quickly with rolling, adding the filling, rolling and cooking. Again, you don’t want the dough to get warm.
  • If needed, flour the work surface and rolling pin to prevent chocolate chip pop-tart dough from sticking

Instead of an air fryer pop tart, make a baked chocolate chip toaster pastry; Place the chocolate chip pop tart pastry on a parchment lined baking sheet and bake at 425°F for 9 minutes.

Ingredients

  • ¼ cup Oat Flour, 22g, see post for subs
  • 1 tablespoon Chocolate Protein Powder, 6g
  • 1 tablespoon Peanut Butter Powder, 6g
  • 2½ tablespoon Non-fat Plain Greek Yogurt, Cold 36g
  • ¾ teaspoon Chopped Chocolate Chips, 3g

Filling:

  • ½ tablespoon Chocolate Chips, Sugar free recommended below, 7g
  • ⅛ teaspoon Coconut Oil
  • ½ tablespoon Chocolate Protein Powder, about 3g
  • 1 teaspoon Unsweetened Cocoa Powder, 1-2g
  • 1½ teaspoon Almond Milk, 7ml

Instructions

  • Process oat flour, protein powder and peanut butter powder in food processor.
  • Add Greek Yogurt and process to form dough – about 15 seconds; Stop as soon as ball forms.
  • Add chopped chocolate chips and knead together.
  • Divide into two halves. Roll each dough into a ball and then into rectangles (about 5”x4”, ⅛” thick); Use scrap pieces around edges to make proper shape if needed.

Filling:

  • Place chocolate chips and coconut oil in a bowl and microwave 20-30 seconds until they start to melt. Stir with spoon to melt completely, then let cool a bit (or chocolate will harden).
  • Add protein powder, cocoa powder and milk; Stir until smooth.

Assemble and Bake:

  • Take one dough rectangle and spread filling in the middle (leave about ½” from the edge).
  • Cover with other rectangle, and seal edges with fork.
  • Place in air fryer basket and cook at 400°F for 7 minutes.
    (or bake 425°F for 9 minutes, flipping halfway)
  • Let cool for a few minutes.
