Truth be told; The only reason I made these chocolate covered almond bites was to use an actual chocolate coated almond for this cross section.

I mean come on, just plain ground almond protein balls would look too simple without that chocolate covered part right?

A healthy almond flour protein ball recipe that actually looks pretty too!

Ingredients for Chocolate Covered Almond Protein Balls

These chocolate covered almond protein balls are made with clean ingredients like oat flour, ground almonds and protein powder, and are great for a healthy snack. Here’s all that goes in:

  • Oat Flour – You can makey our own with rolled oats in a blender
  • Almond Flour also known as ground almonds
  • Protein Powder for high protein energy balls recipe, and also replace the sweetener.

    Another option would be Quest.
  • Unflavored Collagen I use the one from Further Foods (HAYLSKITCHEN gives you a discount)
  • Coconut Flour
  • Cashew Butter
  • Unsweetened Almond Milk
  • Chocolate Covered Almonds –  I’d recommend the sugar free ones from Lakanto (Use my code HAYLSKITCHEN for a discount)

For the chocolate covered almond effect:

  • Chocolate Chips: The sugar free from Lakanto again here (same code HAYLSKITCHEN for a discount) 
  • A bit of Coconut Oil

How to make Ground Almond Protein Balls with Protein Powder

These almond flour protein powder balls really are extremely easy to make – a simple no bake, mix and roll recipe.

  1. Combine the protein ball ingredients in a bowl – oat flour, almond flour, vanilla protein powder, unflavored collagen, coconut flour, cashew butter and milk.
  1. Stir until it forms a dough.
    If it’s too dry, add just a teaspoon of milk, and some more coconut flour if too wet.
  2. Spoon out some of the protein ball mix, about 1-2 tablespoon worth, roll into ball.
    Make a depression, place the chocolate covered almond in, then cover and roll up again.
  1. Place the chocolate almond protein bites in the freezer for 5 minutes.
  1. For that chocolate coating:
    1. Place chocolate chips and coconut oil in a bowl and microwave 45 seconds – stirring every 20 seconds – until melted.
      Let the chocolate cool a bit.
    2. Line a plate or baking sheet with parchment paper.
    3. Place balls (one at a time) into chocolate, roll around using 2 forks or spoons coat.
      Place on prepared plate/sheet to cool

To Store Chocolate Almond Protein Bites

These chocolate covered almond inspired protein balls are best stored in the fridge since they do have a bit of milk in there.

To store almond protein bites in the fridge, keep in an airtight container for up to 1 week.

To freeze almond energy bites, place in an airtight sealed container or freezer safe zipper bag  for 2-3 months. Let them thaw on the counter before eating!

Alternate ingredients for healthy Almond Energy Balls

I made sugar free, gluten free and healthy chocolate covered almond protein balls with the ingredients above, but here’s some other clean ingredients you can try.

  • Oat flour: More almond flour
  • Almond Flour: More oat flour, or even cashew flour
  • Unflavored collagen: Unflavored protein powder, or even Almond flour or Oat flour
  • Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
  • Cashew Butter: Almond Butter, Hazelnut Butter or Tahini; Use a neutral nut or seed butter. I would not recommend peanut butter.
  • Almond Milk: Regular milk or other non dairy milk
  • Chocolate Covered Almonds: Regular almonds
  • Chocolate Chips: Chopped chocolate bar, or leave out if you want to
  • Protein Powder – Lakanto 1:1 Zero Calorie Monkfruit sweetener to keep it sugar free. (code HAYLSKITCHEN gets you a discount).

To make Almond Bites Vegan

Use a plant based protein powder and dairy free chocolate chips to make Vegan almond protein balls; There’s no cream, no butter and no eggs in here already 🙂

Ingredients

  • ⅓ cup Oat Flour, 30g
  • ¼ cup Almond Flour, 20g
  • ½ scoop Vanilla Protein Powder, 15g
  • 1½ scoop Unflavored Collagen, 15g, see post for subs
  • 1½ tablespoon Coconut Flour, 11g
  • 1½ tablespoon Cashew Butter, 24g
  • 2 tablespoon Unsweetened Almond Milk, 30ml
  • 9 Chocolate Covered Almonds, or regular, Sugar free recommended below
  • 2 tablespoon Chocolate Chips, 28g, Sugar free recommended below
  • ¼ teaspoon Coconut Oil

Instructions

  • Combine first 7 ingredients in a bowl and mix – oat flour, almond flour, vanilla protein powder, unflavored collagen, coconut flour, cashew butter and almond milk.
    Add milk if the mix is too dry or coconut flour if the mix is too wet.
  • (Use lightly wet palms) Spoon out about a tablespoon of mixture, roll into ball.
    Press a depression, place a chocolate covered almond in the middle and cover. Roll into ball again.
    Repeat with all mixture; You should have 9 protein balls.
    Place balls in freezer to harden about 5 minutes.
  • Place the chocolate chips and coconut oil in a shallow bowl and microwave for about 45 seconds – at 20 second intervals – until it’s completely melted. Let cool about 5 mins.
  • Line a plate or baking sheet with parchment paper.
  • Place the protein balls, one at a time, in the melted chocolate, and use 2 forks/spoon to roll it around until completely coated.
    Shake off excess chocolate and place on baking sheet to harden.

    Omg! These were to die for! My first recipe ever from your page. Fairly easy to make! I got the lakanto chocolate covered almonds and chocolate chips from their website using ur code.
