Magic Chocolate Lava Protein Cookie for One

A truly magical healthy Chocolate Lava Protein Cookie with the perfect gooey chocolate center, and single serve too! This giant molten lava protein cookie is sweetened with protein powder and uses sugar free chocolate, making it the perfect indulgence for one.

Oh my word you guys, I was shook with this molten lava cookie.

I don’t even know what I waited this long for to try this protein molten chocolate cookie, because it is just the most perfect cookie you could as for.

A healthy chocolate lava cookie with a gooey chocolate center, like come on. I actually just paused for a second after taking a bite into it because I really had no words or thoughts on how good this lava cookie was.

Ingredients for Chocolate Lava Protein Cookie for One

This healthy molten lava protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar sugar either! A great vegan protein cookie recipe too.

  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Chocolate Protein Powder for high protein cookie that’s also sugar free.
    I used ProteinWorld Whey, but the ProteinWorld Slender Blend is another great option. Code HAYLSKITCHEN gets you a discount on both.
    A third alternative would be Quest.
  • Unsweetened Cocoa Powder or Cacao Powder
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Non-fat Greek Yogurt contributes to the oil-free part of these chocolate protein cookies since it adds the moisture, and also extra protein 
  • Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
  • Baking Powder

And then of course.. 

  • Chopped Chocolate (or Chocolate Chips) for cookies with a gooey chocolate center. I’d recommend the sugar free ones from Lakanto. The code HAYLSKITCHEN works here too.

How to make a Single Serve Molten Lava Protein Cookie

To make one of these giant chocolate lava protein cookies, you mix the protein cookie dough, spread it out and just bake!

  1. Preheat your oven to 350°F and line a baking pan with parchment paper.
  1. Mix your ingredients – oat flour, protein powder, cocoa powder, peanut butter powder, almond milk, Greek yogurt and baking powder – in a bowl.
  1. Transfer ½ protein cookie dough onto the baking sheet in a round cookie shape.
  1. Place chocolate piece in the middle to form the gooey chocolate center of the protein cookie.
  1. Cover with remaining chocolate protein cookie dough and shape it into a giant molten chocolate protein cookie for one.
  1. Bake for 13-14 min. You might need a minute extra; make sure the top is completely dry to touch.

Let it cool a bit, and indulge!

Alternates for this Single Serving Giant Molten Chocolate Protein Cookie

I recommend making this molten lava chocolate protein powder cookie using the ingredients and products listed – since it gives the best results.

If you need other options for the flours and such, here’s some alternatives:

  • Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too. Go by the weight for these substitutions.
    You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it.
  • Chocolate Protein Powder: Use Vanilla Protein powder instead of chocolate, or
    1:1 Zero Calorie Sugar Substitute; I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
  • Peanut Butter Powder: Use real peanut butter, but reduce almond milk to 2 tbsp
  • Regular non-dairy milk to replace almond milk.
  • Coconut Yogurt in place of Greek Yogurt

A Vegan Protein Cookie Recipe

This single serve chocolate lava protein cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.

Ingredients

  • ¼ cup Oat Flour, 22g, see post for subs
  • 2 tablespoon Chocolate Protein Powder, about 11g
  • 1 tablespoon Unsweetened Cocoa Powder, or Cacao Powder, 5g
  • 1 tablespoon Peanut Butter Powder, 6g
  • ¼ + ⅛ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk
  • 2 tablespoon Non-fat Plain Greek Yogurt, 28g
  • ¾ oz Chocolate Piece, or Chopped Chocolate/ Chips, Sugar free recommended, 21g

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Combine all the ingredients except the chocolate chips in a bowl – oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, greek yogurt and baking powder.
  • Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.
  • Place chocolate piece in the middle, cover with remaining cookie mixture and shape.
  • Bake about 13-14 minutes – top should be cooked and dry to touch.
  • Let cool for a few minutes and enjoy!

    This is definitely a recipe you should try. This chocolate lave protein cookie is so easy to make and it’s insanely delicious. Gooey chocolate center is amazing. And bonus has no sugar and eggs in it!
