Y’all this single serving protein cookie was actually so huge! I legit did not expect it to be this big.

Definitely a good kind of surprise though coz more food (aka more cookie) means more happiness. Especially with that chocolate lava center! 🙂

Ingredients for Chocolate Lava Pumpkin Protein Cookie for One

This healthy molten lava pumpkin protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar sugar either! A great vegan protein cookie recipe too.

  • Pumpkin Puree: Make sure it’s just the plain puree and not pumpkin pie filling.
  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Vanilla Protein Powder for healthy, whey protein protein mug cake that’s also sugar free
I used Quest Nutrition Vanilla Milkshake protein powder here.
ProteinWorld Whey and ProteinWorld Slender Blend are also great options. Code HAYLSKITCHEN gets you a discount on both.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cookie. Quest Nutrition whey-caesin again here.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Non-fat Greek Yogurt contributes to the oil-free part of these chocolate protein cookies since it adds the moisture, and also extra protein
  • Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
  • Pumpkin Pie Spice (or a homemade version; there’s plenty recipes online)
  • Baking Powder

And then of course..

  • Chopped Chocolate (or Chocolate Chips) for cookies with a gooey chocolate center. I’d recommend the sugar free ones from Lakanto. The code HAYLSKITCHEN works here too.

How to make a Single Serve Molten Chocolate Pumpkin Protein Cookie

To make one of these molten chocolate pumpokin protein cookies, you mix the protein cookie dough, spread it out and just bake!

  1. Preheat your oven to 350°F and line a baking pan with parchment paper.
  1. Mix your dry ingredients – oat flour, vanilla protein powder, unflavored protein powder, peanut butter powder, pumpkin pie spice and baking powder – in a bowl.
  2. Add in wet ingredients: pumpkin puree, Greek yogurt and almond milk.
  1. Transfer ½ pumpkin protein cookie dough onto the baking sheet in a round cookie shape.
  1. Place chocolate piece in the middle to form the gooey chocolate center of the protein cookie.
  1. Cover with remaining chocolate protein cookie dough and shape it into a giant chocolate pumpkin protein cookie for one.
  1. Bake for 13-14 min. You might need a minute extra; make sure the top is completely dry to touch.

Let it cool a bit, and indulge!

Alternates for this Single Serving Pumpkin Protein Powder Cookie

I recommend making this molten lava pumpkin protein powder cookie using the ingredients and products listed – since it gives the best results.

If you need other options for the flours and such, here’s some alternatives:

  • Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too. Go by the weight for these substitutions.

You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it.

  • Unflavored Protein Powder: More flour (also 1 Tbsp)
  • Peanut Butter Powder: Use 2 teaspoon peanut butter, but reduce almond milk to 2 tsp
  • Pumpkin Pie Spice: Ground Cinnamon
  • Almond Milk: Regular milk
  • Greek Yogurt: Coconut Yogurt

A Vegan Pumpkin Protein Cookie Recipe

This single serve pumpkin protein cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.

For the perfect eggless Vegan pumpkin protein cookie, make sure you use a plant based protein powder, coconut yogurt and dairy free chocolate.

ProteinWorld has a Vegan protein blend as well (HAYLSKITCHEN for the discount here too).
