Everyone’s making mug cakes and mug whatever’s or other protein dessert recipes in the microwave, so I thought why not make a cookie too?!

I would say this was a slightly cakey soft cookie, with definitely a lot of chocolate!

My favorite part though was definitely the size. This recipe makes one massively giant cookie, but still healthy enough to be a single serve!

The perfect way to satisfy those cookie cravings – especially at midnight – while still keeping it nutritious.

Ingredients for Chocolate Microwave Protein Cookie Recipe

This healthy protein cookie recipe has just 6 simple ingredients, and is eggless, has no butter or oil and no sugar sugar either! A great vegan microwave cookie recipe.

  • Chocolate Protein Powder; I used a stevia sweetened one from Quest Nutrition in this recipe to make this high protein cookie sugar free.
  • Oat Flour
  • Unsweetened Cocoa Powder or Cacao Powder
  • Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
  • Baking Powder

And then of course.. Chocolate Chips! I’d recommend the sugar free ones from Lily’s.

How do you make a Single Serve Protein Cookie in the Microwave

Most microwave dessert recipes need a container of some sort, but this single serve protein cookie has no mug. You shape the protein cookie dough and make a giant microwave cookie on a plate!

  1. Mix your dry ingredients – protein powder, oat flour, cocoa powder and baking powder – in a bowl.
  1. Add in the milk (a little at a time so it doesn’t get too runny) and stir to form the batter.
    You might need less or more depending on the protein powder brand.
  1. If using chocolate chips, add in most of them, leaving some for the topping later.
  1. Grease a microwavable plate with cooking spray or oil.
  1. Transfer protein cookie dough on plate and shape it into a big giant cookie for one.
    Sprinkle on more chocolate chips if you’d like.
  1. Microwave for 1 min 15 seconds. You might need 5-10 seconds extra depending on the microwave; make sure the top is dry to touch.
  2. Let it cool a bit, and indulge!

Alternates for this Giant Protein Cookie for One

I recommend making this giant microwave cookie using the ingredients and products listed – especially the protein powder brand – since it gives the best results.

If you need other options for the flours and such, here’s some alternatives:

  • You can try to use almond flour in place of the oat flour (I’m a little hesitant about this one, so let me know if you try it).
  • Vanilla Protein Powder in place of chocolate.
  • Regular non-dairy milk to replace almond milk.

This microwave protein cookies recipe has no eggs and uses almond milk, so can easily be made Vegan too.

For the perfect eggless Vegan microwave cookie, make sure you use a plant based protein powder and dairy free chocolate chips.

Mix-ins for Giant Microwave Cookie

This microwave dessert recipe makes a giant chocolate cookie, so I went for chocolate chips in the cookie batter.

For some more options, you can mix in some chopped nuts – walnuts, almonds, pistachios – or may be even some seeds – cashew or pumpkin are good options.

Ingredients

  • 3 tablespoon Chocolate Protein Powder, Whey-Casein recommended, 17g
  • 2 tablespoon Oat Flour, 15g
  • 1 tablespoon Unsweetened Cocoa Powder, or Cacao Powder, 5g
  • ¼ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • ½ tablespoon Chocolate Chips, Optional, Sugar free recommended, 9g

Instructions

  • Combine all the dry ingredients except the chocolate chips in a bowl – protein powder, oat flour, cocoa powder and baking powder.
  • Add milk (little at a time) and stir until smooth but thick.
  • Fold in chocolate chips, reserving a few.
  • Lightly grease a microwave-safe plate with oil or cooking spray.
    Transfer cookie mixture, spread with spoon and shape.
    Sprinkle on remaining chocolate chips.
  • Microwave on high for about 1 min 10 seconds – top should be dry to touch.
    Let cool for a few minutes and enjoy!
