After making my Nutella ages ago, I’ve just been looking for opportunities to use it.

Not gonna lie, I did end up eating half that thing just plain – or spread atop toast. But I felt like I wasn’t doing justice to such a delicacy by ‘wasting’ it on just eating it plain.

So of course I started a list of nutella dessert and breakfast recipes to try. All the easy and healthy stuff, but also super rich in the whole chocolate hazelnut flavor.

Cookies came from fact that it’s currently cookie season!

Breakfast oatmeal cookies might not be the conventional holiday cookie, but come on – they’re essentially pure Nutella and just held together with a few other ingredients. I’d take these any season!

With just 4 simple ingredients, it will be hard to find nutella cookies that are easier than these

  • Nutella
  • Instant Oats or Quick Oats or even Rolled oats here
  • An Egg
  • Baking Soda

What makes these The Best Nutella Oatmeal Cookies?

As compared to the normal chocolate hazelnut spread oatmeal cookies, these ones are made with my homemade Sugar free Nutella!

Yes, that’s right. These cookies are made with Nutella that’s sweetened with stevia so there’s no sugar added here.

How to make Chocolate Hazelnut Oatmeal Cookies

Not only do these cookies have an easy ingredient list, but also a just as easy process!

  1. Prep: Preheat your oven to 350 and line a baking sheet with parchment paper.
  1. In a food processor, process the oats for a bit to make a rough flour.
  1. Combine all the ingredients in a bowl: Oats, Nutella spread, Egg and Baking Soda.
  1. Use a spoon to scoop out some of the cookie dough, shape it and place it on a parchment lined baking sheet.
    The cookies won’t spread.
  1. Bake them for 10 minutes.

Can you store Nutella Oat Cookies

These chocolate hazelnut spread cookies can be stored on the counter, in the fridge or even freezer.

Place them in a sealed airtight container and they keep 4 days on the counter top, a week in the fridge, or a couple of months in the freezer!

Make No Bake Nutella Oatmeal Cookies

The most easy alternative to these Nutella cookies is to go for a version that has no oven involved.

For a no bake Nutella oatmeal cookie recipe, replace the egg with 3 Tablespoons of Almond Milk and avoid the baking soda. You might need to add a bit of extra oats if the dough is too runny.
This also makes this recipe Vegan!

Then shape the cookies as you like and indulge!

If you’re a total Nutella fan and want a dessert – or I guess even a breakfast in this case – recipe that’s just overloaded with the goodness, here is a major upgrade.

Amp up these Nutella cookies by filling them with extra of the chocolate hazelnut spread.

For this:

  1. Spoon about 1 teaspoon servings of the Nutella on a parchment lined baking sheet and place it in the freezer for about 5-10 minutes.
  2. Divide each cookie dough ball into 2, flatten them both, put a frozen Nutella lump in the middle of one piece, and cover with the other.

Then bake as usual!

Orrrrr Nutella Chocolate Chip Oatmeal Cookies!

If you’re up for some extra chocolatey goodness – because who isn’t – you can add some chocolate chips or chocolate chunks into the Nutella cookie dough.

To keep these cookies sugar-free, I’d recommend Lily’s.

Ingredients

  • ⅓ cup Nutella, 85g, See recipe below
  • ½ cup Instant or Rolled Oats, 45g
  • 1 Egg
  • ¼ teaspoon Baking Soda

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Place oats in a small food processor and process until it gets a rough flour-like consistency.
  • Combine all ingredients in a bowl: Nutella, Oats, (whisked) Egg and Baking Soda.
  • Scoop out about 2 tablespoon mixture at a time, roll (use slightly damp palms), flatten or shape as desired (cookies will not spread) and place on prepared baking sheet.
  • Bake for 10 min. Let rest on pan for about 5 minutes to firm up. Transfer to wire rack to cool completely.

  • Fridge: 1 week in an airtight container.
