An extremely quick recipe here because I’ve been having major sugar cravings all day.

Very good call here because this hot baked cookie dough pot was just the perfect single serve protein dessert I needed for a quick sugar free craving satisfier.

I ended up eating some of the raw cookie batter as well and was afraid I wouldn’t have enough to fill that ramekin!

Ingredients for Hot Half Baked Protein Cookie Pots

This single serving half baked protein cookie dough is made with a few simple and healthy ingredients, is gluten free, has no butter or oil and no sugar sugar either! 

  • Vanilla Protein Powder for high protein hot cookie dough that’s also sugar free.
    I used ProteinWorld Whey, but the ProteinWorld Slender Blend is another great option. Code HAYLSKITCHEN gets you a discount on both.
    A third alternative would be Quest.
  • 1:1 Gluten Free Baking Flour
  • Coconut Flour
  • An Egg White for even more protein
  • A bit of Peanut Butter
  • Almond Milk to make this recipe dairy free
  • Baking Powder

How to make a Half Baked Cookie Dough for One with Protein Powder

This hot half baked protein cookie dough is a super quick recipe and takes just one bowl.

  1. Preheat your oven to 350°F and lightly grease a ramekin.
  1. Mix your ingredients – gluten free baking flour, protein powder, coconut flour, egg white, peanut butter, baking powder and almond milk (adding slowly) – in a bowl.
    Batter should be smooth but slightly thick. Add more coconut flour if it’s too runny, milk if too dry.
  1. Add in most of the chocolate chips or chunks, leaving some for the topping later.
  1. Transfer high protein cookie dough batter onto the ramekin.
    Sprinkle on more chocolate chips.
  1. Bake the hot cookie dough for 10 min. The top should be just set

Let it cool a bit, and indulge!

Alternates for Healthy Half Baked Protein Cookie Dough

I recommend making this half baked protein cookie pot recipe using the ingredients and products listed to make it actually healthy.

If you need other options for the flours and such, here’s some alternatives for a good half baked cookie for one:

  • Gluten Free Baking Flour: Use Oat flour, whole wheat pastry flour or all purpose flour (in the same amount by weight, not tablespoons).
    You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it.
  • Coconut Flour: Maybe 3x of almond flour, or reduce the amount of milk; I haven’t given this a go either.
  • Vanilla Protein Powder: Chocolate protein powder or any other flavor
  • Almond Milk: Regular or any other non-dairy milk

A Vegan Hot Baked Protein Cookie Dough

To make single serve hot baked protein cookie dough recipe, use plant based protein powder and replace egg whites with aquafaba.

Also be sure to use dairy free chocolate chips.

Mix-ins for Single Serve Hot Cookie Dough Recipe

This single serve protein dessert makes a good base hot cookie dough recipe, so you can customize it with whatever mix ins you like.

Here’s some ideas:

  • Chopped nuts – walnuts, almonds, pistachios, macadamia nuts
  • May be even some seeds – cashew or pumpkin are good options
  • Dried fruit like cranberries or raisins would work quite well

Ingredients

  • 3 tablespoon Vanilla Protein Powder, about 17g
  • 1 tablespoon 1:1 Gluten Free Baking Flour, 8g, see post for subs
  • 2 teaspoon Coconut Flour, 5g
  • ¼ Baking Powder
  • 1 Egg White, 30g
  • 1½ tablespoon Unsweetened Almond Milk
  • 1 teaspoon Peanut Butter, 5g
  • ½ tablespoon Chocolate Chips, Sugar free recommended below, 7g

Instructions

  • Preheat oven to 350°F and grease a 1 cup ramekin with cooking spray.
  • In a bowl, stir vanilla protein powder, gluten free flour, coconut flour, egg white, peanut butter, baking powder and milk (gradually).
    Batter should be smooth but thick; Add more coconut flour if too runny and milk if too dry.
  • Add in half the chocolate chips.
  • Transfer batter into ramekin and top with more chocolate chips.
  • Bake for 10-11 minutes.
    Top should be just set.
  • Let cool for a few minutes and enjoy!
