Phenomenal Healthy S’mores Monkey Bread that’s high protein, low sugar and low fat! Protein S’mores pull apart bread uses protein powder and Greek yogurt instead of sugar, butter or yeast.

Not even kidding, this s’mores monkey bread recipe was just beautiful! What an amazing flavor and softness and everything!

I thought it would be hard to make, but it really wasn’t. It was just mixing the dough in a bowl, rolling it into balls, rolling the balls in the coating and then baking.

Ingredients For Healthy S’mores Monkey Bread

This healthy s’mores monkey bread recipe uses no sugar or yeast or butter (outside the coating) and is actually made with protein powder and Greek yogurt instead. A truly clean and healthy high protein s’mores monkey bread.

  • Whole Wheat Pastry Flour
  • Vanilla Protein Powder for a high protein s’mores monkey bread recipe, and also replace the sugar.
I used Quest Vanilla milkshake flavor since it’s a whey-casein and works best for baking.
  • Unflavored Protein Powder to replace some of the flour in the recipe for a slightly low calorie protein monkey bread. I used Quest Nutrition Multi-purpose whey-casein blend.
  • Non-fat Greek Yogurt another protein-packed ingredient
  • A bit of Unsweetened Almond Milk
  • Baking Powder

The Graham Cracker coating:

  • Crushed Graham Crackers
  • A bit of Melted Butter

And for Topping:

  • Mini Marshmallows
  • Sugar-free Chocolate: I recommend Lakanto Chocolate Bar for this recipe; Code HAYLSKITCHEN gives you a discount on this.

How to make perfect S’mores Pull Apart Bread with Protein Powder

This protein powder s’mores pull apart bread is an easy recipe – no yeast needed – but here’s some pointers to get it perfect. Just mix the dough, roll the balls, roll in coating and bake.

  • Use cold yogurt and milk so that the dough doesn’t get too runny.
  • Don’t skip the milk, but add it little at a time; It adds a fair amount of moisture.
  • Don’t over-mix the dough or it will get too warm and soft.
Also, the protein powder can make the sweet pull apart bread tough.
  • Don’t let dough sit out for too long; Work quickly; You don’t want the dough to get warm and hard to handle.
  • Slightly sticky dough is wanted. It should still be rollable with slightly wet hands though.
  • Use wet palms to roll the dough into balls so it doesn’t stick to your palms. The dough is actually very sticky.

Tips for coating on the S’mores Protein Monkey Bread:

  • Crush Graham Crackers fine so that they form a smooth coating on the ‘smores monkey bread balls.
  • Use one hand to coat bread balls with melted butter, another hand to coat with crushed Grahams. This avoids messes.

Store Protein S’mores Monkey Bread

This high protein s’mores monkey bread is a great meal prep recipe for breakfast or for a party, and safe to have leftovers of as well.

Keep protein s’mores pull apart bread in an airtight container on the countertop for 2 days, in the fridge for 5 days or freezer for up to 2 months.

When it’s time to eat, thaw to room temperature and warm them in the microwave for extra goodness.

Alternatives for Healthy S’mores Pull Apart Bread

I used the particular list of ingredients I mentioned for a healthy s’mores pull apart bread recipe, but here’s some other alternatives:

  • Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight not cups.
  • Unflavored Protein Powder: More Plain flour, but reduce the amount of yogurt to maybe ¾ cup, and milk to 1½ tsp.
  • Unsweetened Greek Yogurt: Vanilla greek yogurt, but try to keep it light.
Coconut yogurt could be an option.
  • Almond Milk: Regular Milk
  • Butter: Dairy-free butter

For a Vegan S’mores Monkey Bread Option

You can easily make this s’mores pull apart bread Vegan using coconut yogurt instead of Greek yogurt, and plant based protein powder. Also be sure to use dairy-free butter.
