I think I’m really getting hooked on this whole healthy matcha desserts thing here, because this is probably my second one in less than a month.

That rich green tea flavor really is something amazing, and it totally comes through in these protein blondies as well.

The earthy tones of the matcha along with the sweet vanilla caramel protein powder blondie – a really good combination for sure!

Added those chocolate chunks on the top for a color contrast, but these healthy matcha blondies are without chocolate in the actual batter; Clean good stuff!

Ingredients for Matcha Protein Blondies

These high protein matcha blondies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect vanilla Green tea protein powder blondie!

  • Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
    I used half whey-caesin Vanilla protein powder from Quest Nutrition, and half the Slender Blend form ProteinWorld in these protein powder blondies recipe (code HAYLSKITCHEN gives you a discount on ProteinWorld). They have a Whey Protein Powder that’s great as well.
  • Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
  • 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free;  (code HAYLSKITCHEN for a discount here too)
  • Matcha Green Tea Powder – A good quality one here
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • A bit of creamy Peanut Butter
  • Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie protein blondies since it adds the moisture, and also extra protein 
  • Almond Milk or regular milk
  • Baking Soda

And then for the topping:

  • Sugar free Chopped Chocolate or chocolate chips. I use the ones from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Chocolate Chips.

You can also leave these out and just make matcha blondies without chocolate 🙂

Alternatives for Healthy Matcha Blondies without Chocolate

For the perfect matcha flavored high protein protein blondies, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all so I can’t say how your recipe might turn out, but I’d love to know if you do!

  • 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour; The same amount by weight
  • Greek Yogurt: Coconut Yogurt
  • Almond Milk: Any other milk 
  • 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
  • Peanut Butter Powder: Regular Peanut Butter, but reduce the milk to about ¼ cup (I haven’t tried this yet though)
  • Peanut Butter: Almond Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini

To make Matcha Vegan Protein Blondies

For a high protein Vegan blondies recipe, use coconut yogurt in place of Green Yogurt, dairy free chocolate and also a plant based protein powder.

ProteinWorld has a Vegan protein blend as well (HAYLSKITCHEN for the discount here too).

I haven’t tried pea protein or other plant based ones, so I can’t say how those would work here.

How to store Green Tea Protein Blondies?

This high protein Japanese green tea blondie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!

Store matcha protein powder blondies at room temperature in an airtight container for 1-2 days or in the fridge for a week.

To freeze healthy matcha blondies, individually wrap each protein blondie square in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Ingredients

  • 60 g 1:1 Gluten Free Baking Flour, see post for subs
  • ½ cup Vanilla Protein Powder, 45g, about 1½ scoops
  • ¼ cup Zero Calorie 1:1 Sugar Replacement, 48g
  • 3 tablespoon Peanut Butter Powder, 18g
  • ½ teaspoon Baking Soda
  • 1 cup Non-fat Greek Yogurt, 225g
  • ⅓ cup Unsweetened Almond Milk, 80ml
  • 1 tablespoon Creamy Peanut Butter, 16g
  • 1 tablespoon Matcha Green Tea Powder
  • 2 tablespoon Chopped Chocolate or Chocolate Chips, 28g, Sugar-free recommended below

Instructions

  • Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
  • In a bowl, whisk gluten free baking flour, vanilla protein powder, zero calorie sugar replacement, peanut butter powder and baking soda.
  • In a large bowl, whisk together Greek yogurt, almond milk and peanut butter.
  • Add dry mix to wet, and gently fold until combined. DO NOT OVER-MIX or protein powder will make the blondies dense.
  • Divide mixture into two bowls.
    Bowl 1: Add matcha green tea powder
    Bowl 2: Add half chocolate chunks
    Gently fold until just combined; Batter will be thick.
  • Add large spoonfuls of batter into pan, alternating to make a pattern.
    Top with remaining chocolate chunks.
  • Bake for 25-30 minutes or until the top is set. Toothpick inserted into the center should come out mostly dry.
  • Remove from oven and let cool completely.
    Cut into slices and enjoy!
