Okay this Easter egg protein cookie was so good, my fiancé ate 2 of them! So rich and so good, he was at loss of words.

But for real – no guilt on these ones because it’s all healthy ingredients in this Easter chocolate cookie.

Ingredients for Mini Egg Protein Cookie

This healthy mini egg protein cookie recipe has just a few simple ingredients, and is eggless, has no butter or oil and no sugar either.

  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Chocolate Protein Powder for high protein cookie that’s also sugar free.
    I used a whey-caesin blend form HTLT Supps; It works great for baking.
  • Unsweetened Cocoa
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Non-fat Greek Yogurt contributes to the oil-free part of these chocolate Easter protein cookies since it adds the moisture, and also extra protein 
  • Unsweetened Applesauce for a little more dense and moist cookie
  • Almond Milk
  • Baking Powder

Tips for Chocolate Easter Egg Protein Cookie

This chocolate easter egg protein cookie is super easy to make, but here’s some tips to get it right.

  • Mix the dry ingredients well before adding the wet; This way you get a smooth batter.
  • Spread the cookie mixture into a shape – the cookie won’t spread when baking.
  • Let the cookie cool before adding the topping or the frosting will melt away.

How to store Mini Egg Chocolate Protein Cookie

This mini egg chocolate protein is a great single serve recipe, but you can make extras and store it in the fridge.

Store Easter chocolate protein cookie in an airtight container on the countertop for 2-3 hours, or fridge for 2-3 days.

If you need other options for the flours and such, here’s some alternatives:

  • Oat flour: Use Whole wheat pastry flour, all purpose flour or 1:1 Gluten-free all purpose baking flour in the same amount by weight not cups.
  • Chocolate Protein Powder: Use Vanilla Protein powder
  • Peanut Butter Powder: Use real peanut butter, but reduce almond milk to 2 tbsp
  • Almond Milk: Regular milk
  • Greek Yogurt: Coconut Yogurt

A Vegan Mini Egg Cookie Recipe

This single serve chocolate mini egg protein cookie recipe has no eggs and uses almond milk, so can easily be made Vegan too.

Ingredients

  • ¼ cup Oat Flour, 22g, see post for subs
  • 2 tablespoon Chocolate Protein Powder, Whey-Caesin, 11g
  • 1½ tablespoon Unsweetened Cocoa, 7-8g
  • 1 tablespoon Peanut Butter Powder, 6g
  • ¼ + ⅛ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • 1½ tablespoon Non-fat Plain Greek Yogurt, 21g
  • ½ tablespoon Unsweetened Applesauce, 8g

Topping:

  • 1 tablespoon Non-fat Plain Greek Yogurt, 14g
  • 1 tablespoon Chocolate Protein Powder, Whey-Caesin, 5g
  • 1 teaspoon Unsweetened Cocoa, 2g
  • ½ teaspoon Unsweetened Almond Milk, 2g
  • 5 g Chopped Mini Eggs

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Combine oat flour, protein powder, cocoa, peanut butter powder and baking powder in a bowl.
  • Add milk, Greek yogurt and applesauce, and mix to form batter.
  • Transfer cookie mixture onto baking sheet, spread with spoon and shape – should be about 5” wide.
  • Bake about 12-13 minutes – top should be cooked and dry to touch.
    Let cool.

Topping:

  • Combine Greek yogurt, protein powder, cocoa powder and almond milk (little at a time) in a bowl.
  • Spread over cooled cookie, top with chopped mini eggs and enjoy!
