I know I’m very late to the party here, but the mint chocolate combination is just so good, I have no words. And what’s even better is the American Dream Nut Butter mint chocolate flavored almond butter! I’ve tried a lot of their flavors, but I think this might be my new number one!

Smooth and creamy mint chocolate flavored almond butter with actual mint chocolate chips and crushed GF ‘Oreos’ and crumbled mint chocolate candy. Had to use that flavor to make something even more indulgent: this mint chocolate protein dessert bowl. A single serve, but one is too little!

Ingredients for Mint Chocolate Protein Dessert

This single serve half baked mint chocolate protein dessert is made with a few simple and clean ingredients, and has no butter or sugar! 

  • Chocolate Protein Powder for a high protein mint chocolate fudge brownie that’s sugar free.
    I recommend Quest Nutrition; It’s a whey-casein and works best for baking.
  • Cocoa Powder
  • Mint Chocolate flavored Almond Butter; from American Dream Nut Butter aka Mint Chocolate Dream Almond Butter. It’s lower fat and higher protein than normal, and just amazing (code HAYLSKITCHEN gives you a discount on these).
    ADNB has other amazing flavors that would work well here too.
  • Peppermint Extract
  • Mint Chocolate Candies – The classic ones from Andes
  • Coconut Flour – or a regular all purpose flour
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • A bit of Vanilla Extract
  • Baking Powder

How to make Mint Chocolate Protein Bowl

This recipe for a warm mint chocolate dessert bowl with protein powder is super easy and great for a single serve indulgence. You literally need to mix all the ingredients in one bowl, and then bake it in a ramekin.

  1. Combine all dry ingredients in a bowl: chocolate protein powder, cocoa powder, coconut flour, baking powder.
  2. Add wet ingredients: almond milk, egg white, mint chocolate almond butter, vanilla, peppermint extract
  3. Mix it all.
  4. Add chopped mint chocolate candy (fold it in).
  5. Transfer to greased ramekin.
  6. Bake at 350°F for 12-14 minutes.

Tips to make Half Baked Mint Chocolate Brownie with Protein Powder

This half baked mint chocolate protein brownie bowl really is quick to make in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the mint chocolate dessert to come off easily from the dish.
    Use an oven-safe mug if you need.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the protein powder will make your protein brownie bowl tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Don’t overcook. The top will should be soft in the center (about half of it) and cooked all around.
    It will continue to cook when out, and you want the proper fudgy center.

Alternates for this Healthy Mint Chocolate Dessert

I recommend making this healthy mint chocolate dessert brownie using the ingredients and products listed since it gives the best results.

If you need other options, here’s some alternatives:

  • Chocolate Protein Powder: Use Vanilla; You might need another teaspoon of Cocoa powder though.
  • Mint Chocolate Almond Butter: Regular almond butter, peanut butter or cashew butter, but add a bit more peppermint extract
  • Coconut Flour: 3 tablespoon Almond Flour
  • Egg Whites: 3 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Almond Milk: Any other milk

Ingredients

  • ¼ cup Chocolate Protein Powder, Whey-casein, 22g
  • 2 tablespoon Unsweetened Cocoa Powder, 10g
  • 1 tablespoon Coconut Flour, 7g
  • ½ teaspoon Baking Powder
  • 2½ tablespoon Unsweetened Almond Milk, 37ml
  • 1½ Egg White, 45g, 3 Tbsp
  • ½ tablespoon Mint Chocolate flavor Almond Butter, 8g, Recommendation below
  • ¼ teaspoon Vanilla Extract
  • ⅛ teaspoon Peppermint Extract
  • 1 Andes Mint Chocolate, Chopped

Toppings:

  • Andes Mint Chocolate, Chopped
  • Ice Cream
  • Mint Chocolate flavor Almond Butter

Instructions

  • Preheat oven to 350°F and lightly grease a 1 cup ramekin.
  • In a bowl, whisk chocolate protein powder, cocoa powder, coconut flour and baking powder.
  • Add almond milk, egg white, mint chocolate almond butter, vanilla, peppermint extract and stir until combined. Batter should be smooth.
  • Add chopped mint chocolate and fold.
  • Pour batter into ramekin.
  • Bake for 12-14 minutes. Top should be mostly set, but still slightly wobbly. It will harden when cool.
  • Let cool for a few minutes, top with more mint chocolate, ice cream, Mint Chocolate Almond Butter and enjoy!
