A simple, skinny Oreo Protein Bread Pudding with protein powder, egg whites, yogurt and actual Oreo cookies! This healthy cookies and cream bread pudding is a great protein packed breakfast, dessert and even post workout treat!

Just a slight adaptation of the chocolate protein bread pudding I made a while ago, but a real good one since it’s got that cookies and cream goodness with the Oreo.

And so so much protein in this skinny bread pudding as well! Kind of a triple protein game here with the protein powder, egg whites and Greek yogurt too.

It sounds fancy, but this Oreo bread pudding really is quite minimalistic; I actually put it together in the middle of a busy work week!

Ingredients for Oreo Protein Bread Pudding

This healthy Oreo protein bread pudding recipe is made with just a few simple and healthy ingredients; No egg, cream or sugar, making this a great skinny bread pudding recipe too!

  • Whole Wheat Bread, or any other
  • Chocolate Protein Powder needed for high protein bread pudding and also replaces the ‘sugar’.
    I used part whey-casein Chocolate flavor from Quest Nutrition, and part whey Chocolate from Dymatize for this recipe.
  • Dirt Pudding or Cookes & Cream flavor Cashew Butter – from American Dream Nut Butter. It’s lower fat and higher protein than normal, and just amazing (code HAYLSKITCHEN gives you a discount on these).
    ADNB has other amazing flavors that would work well here too.
  • Unsweetened Cocoa Powder or Cacao Powder
  • Unsweetened Almond Milk or regular milk
  • Greek Yogurt to replace the heavy cream and make a fat free Oreo bread pudding
  • Egg Whites

And for the proper cookies and cream stuffed bread pudding:

  • Oreo aka Chocolate Sandwich Cookies
  • Candy Coated Chocolate; I recommend the ones from Lily’s; Regular M&Ms work too.

Or if you like, Sugar-free Chocolate Sandwich Cookies; I recommend the Keto friendly Chocolate Vanilla Sandwich Cookies from Catalina Crunch for a healthy cookies and cream cookie bread pudding.

For the Cookies and Cream Protein Bread Pudding Icing

  • The ‘cream’ from the Sandwich Cookie
  • Vanilla Protein Powder (same as above)
  • Unsweetened Almond Milk

Tips for the perfect Oreo Bread Pudding with Cookies and Protein Powder

This Oreo bread pudding with actual Oreo cookies is sweetened with protein powder is really is to make, but here’s some tips to get it tight.

  • Whisk custard well to avoid any lumps of yogurt or protein powder.
  • Mix chopped Oreo with bread so it mixes evenly.
  • Let the bread soak in custard mixture for 5 mins so that the flavor gets fully absorbed.
  • Grease the inside of the dish so the cookies and cream protein powder bread pudding comes out easily when cooked
  • Cover with foil after cooking about 20 minutes to prevent top from burning.

How to Store Meal Prep Oreo Bread Pudding

This skinny and healthy Oreo bread pudding recipe using protein powder is great for a meal prep dessert or breakfast.

Cover baking dish with plastic wrap and store in the fridge for upto 5 days, or use an airtight container.

To freeze Oreo protein powder bread pudding, slice bread pudding into pieces, individually wrap each piece in plastic wrap, place in freezer-safe zipper bag, then freeze.

Alternative Ingredients for Healthy Cookies and Cream Bread Pudding

This high protein healthy cookies and cream bread pudding comes out perfect with the ingredients I used (above), but here’s some more options to try.

  • Whole Wheat Bread: Regular white bread, Brioche, Texas toast, or even hamburger buns!
  • Egg White: Maybe 2 tablespoon aquafaba (chickpea liquid) or a flax egg. I haven’t given this a try yet though.
  • Almond Milk: Any other regular or non-dairy milk
  • Greek Yogurt: Coconut Yogurt or even Cottage Cheese
  • Cookies & Cream flavor Cashew Butter: Regular cashew butter, almond butter, hazelnut butter or even Tahini

A Vegan Protein Cookies and Cream Bread Pudding

For a vegan Oreo protein bread pudding, replace the egg white with a flax egg (1 tablespoon flaxseed meal + 3 tablespoon water let rest 5 min) or Aquafaba, and Greek yogurt with coconut yogurt.

Make sure you use a plant based protein powder and appropriate chocolate sandwich cookies.
Dymatize has a Vegan protein blend as well you could try.

Ingredients

  • 8 slices Whole Wheat Bread, 60-calorie per slice recommended, 224g
  • ⅓ cup Chocolate Protein Powder, Whey-casein, 15g
  • ⅓ cup Chocolate Protein Powder, Whey, 15g
  • ¼ cup Unsweetened Cocoa Powder, 20g
  • 1¼ cup Unsweetened Almond Milk, 300ml
  • ¼ cup Non-fat Plain Greek Yogurt, 56g
  • ¼ cup Cookies & Cream flavor Cashew Butter, Recommendation Below, 56g
  • 4 Egg White, 132
  • 2 Oreo Cookies, Chopped, 21g
  • 7 Candy Coated Chocolate or M&Ms, Sugar free recommended below

Instructions

  • Preheat oven to 350°F, and lightly grease a 9”x6” baking dish (or use an 8”x8” and reduce baking time).
  • Cut bread into 1” cubes and place in baking dish.
    Add most chopped Oreos and toss with hands.
  • In a bowl, whisk together chocolate protein powder, cocoa powder, almond milk, Greek yogurt, dirt pudding cashew butter and egg whites.
  • Pour chocolate custard mixture evenly over bread.
    Press down and let rest 5 min to soak.
  • Bake for 20 minutes, cover with foil, bake another 10-15 minutes until mixture is set on the top; bread should be slightly crisp.
  • Sprinkle on more chopped Oreo and candy-coated chocolates.
  • Let cool a few minutes, slice into pieces, top with more cashew butter and serve.
