Pancake Mix Protein Donuts – Easy 5 Ingredient Recipe

Easy and fluffy Pancake Mix Protein Donuts with 5 ingredients and double protein from protein powder and Greek yogurt. Baked high protein pancake donuts are great for a healthy dessert, breakfast and post workout treat.

Okay not going to lie, I was actually really surprised with how fluffy these pancake doughnuts turned out to be.

These might actually even be fluffier than my normal protein donuts from scratch; I guess pancake mix does do wonders!

Ingredients for Pancake Mix Protein Muffins

These pancake mix protein donuts are made with just 5 ingredients and are perfect for a quick hacky high protein breakfast recipe!

  • Pancake Mix – I used the one from TruEats for this recipe.
    You can also make these donuts with any other just add water pancake mix.
    For an extra high protein recipe, I recommend Kodiak Cakes Protein Pancake Mix.
  • Vanilla Protein Powder for extra high protein donuts, and also replace the sweetener.
    I recommend Quest Nutrition Vanilla protein.
  • Non-fat Greek Yogurt another protein-packed ingredient
  • Almond Milk to add moisture to the donuts – the protein powder absorbs a lot.
  • Egg

For the Chocolate Glaze:

  • Sugar-Free Chocolate Bar like this one from Lakanto
  • Coconut Oil

What Pancake Mix to use for Protein Donut Recipe

You have some options here as to what pancake mix to use in this protein doughnut recipe; You can use whatever pancake mix you have on hand, but be sure to adjust the amount of eggs based on the pancake mix you use. 

  1. Pancake Mix that needs Egg – If your pancake mix instructions (the one on the package) needs an egg to make the pancakes as is, use 2 eggs. For example, the one from TruEats that I use in this recipe needs an egg to make the pancake as per the package directions. Hence I used 2 eggs to make these.
  2. Just-Add-Water Pancake Mix – For a pancake mix that only needs water to make the pancake batter (as per package instructions), use only 1 egg.

How to make Pancake Mix Donuts

This recipe for protein donuts with pancake mix (either with just-add-water pancake mix like Kodiak or other) really is an easy recipe.

  1. Preheat your oven to 350°F and grease 8 cavities of a donut pan.
    You can also use a silicon pan.
  1. Whisk the dry ingredients protein pancake mix and protein powder in a large bowl.
  1. Add the wet ingredients: milk, Greek yogurt and egg, and mix.
    You should have a thick donut batter; Add a tablespoon more milk or pancake mix if the batter is too thick or wet respectively.
    Don’t over-mix or the donuts will be dense from the protein powder.
  1. Divide the mix among the donut cavities, filling them about ⅔ way to the top.
  1. Bake the pancake donuts for 13-15 minutes until a tester inserted into the center comes out dry. 
  1. Melt chocolate and coconut oil in the microwave for about 45 seconds (stirring partway).
    Let the chocolate cool a bit and dunk the rounded end of donuts to glaze.
    Place them plain-side-down on a cooling rack to harden.

Tips for perfect High Protein Pancake Donuts Recipe

This pancake donuts recipe with protein powder is quite easy, and here’s some tips to make sure they turn out perfect!

  • Use room temperature eggs, yogurt and milk;
    This is so the wet ingredients and dry ingredients can mix well.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the protein powder – will make it tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free protein muffins.
  • Lightly grease the donut pan with cooking spray – this will allow the protein powder pancake mix donuts to come off easily!
  • Let donuts cool before glazing, or the chocolate will melt on top.

How to store Doughnuts using Pancake Mix

These weight watchers pancake mix donuts can be stored on the countertop, in the fridge or the freezer for a healthy breakfast or dessert.

Keep the pancake mix protein doughnuts in an airtight container on the countertop for up to 2 days or fridge for 6 days.

To freeze, wrap healthy pancake donuts in plastic wrap, place in a freezer-safe zipper bag, and feeze up to 3 months. Leave them on the countertop or place them in the fridge overnight to thaw. I would not recommend using the microwave.

Alternate Ingredients for Healthy Pancake Mix Baked Donuts

I made these protein pancake donuts with Kodiak Pancake Mix as we as ProteinWorld, and they worked out well with this set of ingredients.

Here’s some alternatives you can try though:

  • Almond milk: Any regular milk
  • Greek Yogurt: Applesauce, Banana or Pumpkin Puree
    Or Coconut yogurt  for a dairy free recipe
  • Egg: To make pancake mix donuts with no egg, try 2 flax eggs (2 tablespoon flaxseed meal + 6 tablespoon water let rest 10 mins). I haven’t given this a try yet though, so can’t say how it will turn out.

Ingredients

  • 90 g Pancake Mix (read post for recommendations)
  • ⅓ cup Vanilla Protein Powder, 30g
  • ⅓ cup Almond Milk, 80ml
  • ¼ cup Nonfat Greek Yogurt, 56g
  • 1-2 Eggs, depending on the pancake mix (see blog post for info)

Chocolate Glaze:

  • 2½ tablespoon Chocolate Chips, Sugar-free recommended, 36g
  • ½ teaspoon Coconut Oil

Instructions

  • Preheat oven to 350°F and spray a 8-cavity donut pan with cooking spray to grease.
  • In a large bowl, whisk together pancake mix and protein powder.
  • Add in Milk, Greek yogurt and egg, and whisk until JUST combined.
    Don’t over-mix or donuts will be dense.
    Batter should be fairly thick; Add 1-2 tablespoon water if it’s too thick, or 1 tablespoon more pancake mix if it’s too runny.
  • Divide the batter among donut pan cavities, about ⅔ way to the top.
  • Bake for 13-15 minutes. A toothpick inserted into center should come out dry.
  • Cool for 5 minutes, then remove from pan. Transfer to a wire rack to cool completely.

Chocolate Glaze:

  • Place chopped chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.
    Allow to cool slightly.
  • Dip rounded side of donut into chocolate and place (chocolate-side up) on a cooling rack to dry out.

Notes

  • If your pancake mix instructions (the one on the package) needs an egg to make the pancakes as is, use 2 eggs. 
    For a pancake mix that only needs water to make the pancake batter (as per package instructions), use only 1 egg.
  • Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
