A delicious and nutritious Peanut Butter Cauliflower Protein Smoothie with no banana! Made with frozen cauliflower, zucchini and protein powder, this low carb and sugar free treat is perfect for a breakfast on-the-go or after a sweaty workout!

If you’re cringing at the thought of a smoothie made with vegetables, you’re me even 5 seconds before I licked the spoon to taste this.

I genuinely had no hope of this turning out like the normal sweet nice cream or shake or smoothie coz there’s no banana or any fruit in here. But thankfully it actually did work out!

Yes, believe me. This was so good, I actually made it 2 days in a row, and only stopped because I ran out of zucchini.

How? The protein powder! It adds in all the sweetness, but without the sugar (or carbs) count.

Make this healthy and sugar free protein packed cauliflower zucchini smoothie with no banana, but protein powder instead.

Ingredients for this Keto Peanut Butter Protein Smoothie Bowl

This low carb, dairy free and sugar free protein ice cream is made with just a handful of inddients 

  • Frozen Cauliflower
  • Frozen Zucchini
  • Vanilla Protein Powder – I used Quest Nutrition
  • Peanut Butter
  • Almond milk
This Keto and low carb protein smoothie shake is made with protein powder and is a great sugar fee recipe without banana - a good weightloss option, and can be made into a protein ice cream too.

How to make this Cauliflower Protein Smoothie without Banana?

Chop up or slice the zucchini and cauliflower and freeze for an hour or two in zipper bags.
I’d recommend blanching, steaming or ricing (make into rice) the cauliflower before freezing, and squeezing out as much air as possible from the zipper bags.

Then blend the frozen vegetables, protein powder, peanut butter and milk in a food processor high speed blender for about a minute.

Serve the peanut butter protein cauliflower-zucchini smoothie in bowl with some toppings.

This thick and creamy Keto and low carb protein smoothie shake is made with protein powder frozen vegetables, and uses almond milk, making it a great vegan, paleo, sugar free and dairy free recipe too.

Some alternate ingredients for this Frozen Cauliflower Protein Smoothie

  • Cashew, Flax or Coconut Milk – Keeps it Vegan and dairy free, but you can use a normal milk too.
  • Collagen Peptides/Collagen Protein Powder – Use this in place of the protein powder, but make sure it’s got some flavor. If not, add in a bit of vanilla extract and sweetener.
  • Peanut Butter Powder – In place of the peanut butter would make it a low calorie, low fat, probably fat free ice cream! You would need a bit of extra milk or water though.
  • Almond Butter or other nut/seed butter – To replace the peanut butter and make this a paleo protein ice cream!
  • Yellow or Summer Squash – in place of the zucchini; It essentially has the same flavor and nutrient profile.
Make this frozen cauliflower and zucchini protein smoothie with peanut butter (or even almond butter for paleo) for a high protein post workout or breakfast protein shake or milkshake.

What makes this a healthy breakfast or post-workout?

  • Loaded with vegetables – This protein shake is packed with nutrition from the frozen cauliflower and zucchini
  • Dairy free – No milk, butter, cream or heavy cream
  • Sugar free – No high sugar fruit like banana, mango or apple
  • No added sugar
  • Low carb and possibly even Keto
  • Vegan since there’s no milk

Want a proper Peanut Butter Protein Ice Cream?

Use only 2 tablespoons of milk, place the mixture in the freezer – in a parchment lined loaf pan or glass container – and let it freeze for about an hour. Then scoop it out and dig in!

Want even more protein in this high protein low carb smoothie?

Add in some Greek Yogurt into the blender with the frozen cauliflower and zucchini. Reduce the milk if you want to keep it extra thick.

Ingredients

  • 1 cup Frozen Cauliflower florets, 107g
  • ½ cup Frozen Zucchini chunks, Peeled, 56g
  • ⅔ scoop Vanilla Protein Powder, 22g, about ¼ cup
  • ¾ cup Almond Milk
  • 1 tablespoon Peanut Butter, 16g

Instructions

  • Blend frozen cauliflower, zucchini, vanilla protein powder, milk and peanut butter in blender or food processor until combined.
  • Scrape down the sides or add a tablespoon of more almond milk to thin if needed.
  • Transfer to a glass or bowl, top with choice of toppings and enjoy!

Notes

  • To freeze cauliflower and zucchini:
    • Wash thoroughly and pat dry with paper towels to remove excess moisture.
      Recommended: Blanch or steam cauliflower, or pulse in a food processor to make cauliflower rice.
    • Place in a single later in freezer-safe zipper bags and squeeze out as much air as possible.
    • Freeze for 1-2 hours.
  • If your protein powder is not sweet enough, add some extra powder (and milk to thin) or 0 calorie sweetener.
  • Nutritional value is calculated using Quest Nutrition protein powder recommended below.
  • To make this Vegan, use a diet-compliant protein powder.
