Peppermint Bark Protein Bars – No Bake, Easy, Healthy

I was’t really a peppermint fan, but these protein bars definitely pushed me over.

Just the right balance of mint and chocolate and frosting, but all healthy, and easy too.

Ingredients for Peppermint Bark Protein Bars Recipe:

These peppermint bark protein bars are made with simple healthy ingredients, have no sugar or heavy cream, making them the perfect gluten free, dairy free and sugar free homemade protein bar!

  • Chocolate Protein Powder for high protein bar recipe, and also replace the sweetener.
    I recommend the ProteinWorld Slender Blend or Whey Protein Powder for this recipe to keep it sugar free; Use the code HAYLSKITCHEN for a discount.
    Another option would be Quest (you’d need more milk here).
  • Unsweetened Cocoa Powder or Cacao Powder
  • Black Cocoa or just more unsweetened cocoa
  • Oat Flour You can make your own with rolled oats in a blender
  • Coconut Flour
  • Almond Milk

The Protein Frosting layers

These raw peppermint bark protein bars use a high protein and sugar free topping made with Greek yogurt and protein powder.

  • Vanilla Protein Powder for high protein icing.
    I recommend Quest here since it’s whey-caesin and blends really well with the yogurt.
  • Non fat Greek Yogurt
  • A bit of Coconut Flour

And for the chocolate peppermint bark topping:

  • Sugar free Chocolate Bar or Chocolate Chips: I use the chips from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Bar or Chocolate Chips.
  • Coconut Oil so the chocolate is easier to melt and more smooth when you drizzle.
  • Crushed Peppermint Candy Canes

Tips for No Bake Protein Powder Peppermint Bars

These protein powder peppermint bars with all the crushed candycanes and layers for a bark effect are really easy to make, but here’s some tips to get it right.

  • Use a whey protein powder for the base; If you use whey-caesin, you might want to adjust the amount of milk to make it more.
  • Mix the dough well to form a smooth mixture, but don’t over-mix since the protein powder might make the texture tough.
  • Use whey-caesin protein powder for the icing since it works well with the ratio of ingredients here and blends well with the yogurt.
  • Let the healthy peppemrint bar layers chill before adding the chocolate and slicing, or they will be too soft.

To store Homemade Peppermint Protein Bars

High protein no bake peppermint bark bars use Greek yogurt for the frosting layer and can only be kept a few hours on the countertop.

Store homemade peppermint bark protein bars in an airtight container in the fridge or freezer so they stay fresh and last longer. They keep in the fridge for up to a 1 week.

To freeze, place no bake peppermint energy bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!

Alternatives for Healthy Peppermint Bars Recipe!

I made this healthy, sugar free and gluten free and low calorie peppermint bar recipe with this particular ingredient list, but here’s some options to choose from.

  • Oat Flour: Almond flour
  • Coconut flour: Try using about 3 tablespoon of Almond Flour

Options for the Protein Icing:

  • Greek Yogurt: Coconut Yogurt

Vegan Peppermint Bars recipe:

Since there’s no milk in this peppermint protein bar recipe, they can easily be made Vegan with the right ingredients.

Use a plant based protein powder to get a Vegan homemade protein bar; ProteinWorld has a Vegan protein blend that would work well here (code HAYLSKITCHEN for a discount).

Also use dairy free chocolate for the topping.

Ingredients

Base:

  • ½ cup Chocolate Protein Powder, 45g
  • ⅓ cup Oat Flour, 30g
  • 5 tablespoon Coconut Flour, 32g
  • 3 tablespoon Unsweetened Cocoa Powder, 15g
  • 2 tablespoon Black Cocoa Powder (or regular), 12g
  • 5 tablespoon Unsweetened Almond Milk, 75ml
  • ½ Crushed Peppermint Candy Cane, 6g

Protein Frosting:

  • ⅔ cup Vanilla Protein Powder, 60g
  • ¼ cup Non-fat Greek Yogurt, 56g
  • 1 tablespoon Coconut Flour, 6g

Chocolate Coating:

  • 1½ tablespoon Chocolate Chips, Sugar-free recommended, 21g
  • ¼ teaspoon Coconut Oil
  • ¼ Crushed Peppermint Candy Cane, 3g

Instructions

  • Line a 8½” x 4½” loaf pan with parchment paper; Leave an overhang to lift out later.

Base:

  • In a bowl combine protein powder, oat flour, coconut flour, cocoa powder, black cocoa and crushed peppermint candycane.
  • Add in milk (a little at a time) and mix. Mixture will be like a dough.
    Add more milk if too dry, coconut flour if too wet.
  • Transfer to pan and press down.

Protein Frosting:

  • In a bowl, mix vanilla protein powder, yogurt and coconut flour until smooth.
    Mixture should be thick but smooth and spreadable.
    Add milk if too thick, coconut flour if too thin.
  • Spread on top of base and use back of spoon/spatula or fingers to smoothen.
  • Place in freezer 10-15 minutes to harden.

Chocolate topping:

  • Place chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.
  • Spread chocolate on bar and use back of spoon to smoothen.
  • Top with crushed peppermint candycanes.
    Let cool 5 min in freezer.
  • Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 6 bars.

    Chocolate and peppermint is an underrated flavor combo! Minus dying my hands black from the black cocoa (should’ve sprayed my hands with cooking spray before pressing the dough), this was a quick, easy recipe that yields delicious bars. I doubled the chocolate chips and peppermint pieces for the top layer because I am a chocoholic. Still amazing macros even with that (on par with a Built or FitCrunch bar). Definitely making these again!
