Protein Millionaire Shortbread – Healthy, Low Calorie, Amazing!

Amazing Protein Millionaire Shortbread bars made low calorie with protein powder and peanut butter, with no condensed milk. These healthy millionaire shortbread protein bars are perfect for a homemade snack or dessert; Vegan too!

I was so proud of the layers on these millionaire shortbread bars you guys.


What a perfect soft dough for the shortbread layer, and the perfectly smooth caramel, and just such a good melt on the chocolate too.

The macros turned out perfect on these as well!

Ingredients for Protein Millionaire Shortbread:

These protein millionaire shortbread bars are made with simple healthy ingredients, have no sugar or condensed milk, making them the perfect gluten free, dairy free and sugar free homemade protein bar!

  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
  • Vanilla Protein Powder for high protein magic cookie bar, and also replace the sweetener.
    I recommend Protein World Slender Blend or ProteinWorld Whey for this recipe to keep it sugar free; Use the code HAYLSKITCHEN for a discount.
    Another option would be Quest.
  • Coconut Flour
  • Sugar free Maple Syrup for low calorie protein bar with no sugar!
    I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount)
  • Almond Milk

The Peanut Butter Protein Caramel Layer

These raw millionaire shortbread protein bars use a high protein and sugar free caramel layer made with peanut butter powder and protein powder.

  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Creamy Peanut Butter
  • Vanilla Protein Powder for high protein peanut butter caramel.
    I recommend the same here too: Protein World Slender Blend, ProteinWorld Whey, or Quest.
  • More Sugar free Maple Syrup 
  • A bit of Water

And for the Chocolate Coating on Homemade Millionaire Shortbread

  • Sugar free Chocolate Bar or Chocolate Chips: I use the chips from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Bar or Chocolate Chips.
  • Coconut Oil so the chocolate is easier to melt and more smooth when you drizzle.

To store Millionaire Shortbread Protein Bars

To store high protein raw millionaire shortbread bars, place in an airtight container and keep on the counter for up to 3 days. 

Keep these homemade millionaire shortbread bars refrigerated or in the freezer so they stay fresh and last longer. They keep in the fridge for up to a 1 week.

To freeze, place shortbread protein bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!

Alternatives for Healthy Millionaire Shortbread Recipe!

I made these healthy, sugar free and gluten free and low calorie millionaire shortbread bars with this particular ingredient list, but here’s some options to choose from.

  • Unflavored protein powder: Unflavored Collagen, or even Almond flour or Oat flour
  • Peanut Butter Powder: Use 2 tablespoon + 2 teaspoon Creamy Peanut Butter, but also reduce the water to maybe 1-1½ Tbsp.
  • Sugar free Maple Syrup: Regular maple syrup or Honey, but they won’t be Vegan or a no sugar recipe anymore.
  • Coconut flour: Try using about 3 tablespoon of Almond Flour

Vegan Millionaire Shortbread without Condensed Milk

Since there’s no condensed milk in this recipe, these millionaire’s bars can easily be made Vegan with the right ingredients.

Use a plant based protein powder to get a Vegan millionaire shortbread bar; ProteinWorld has a Vegan protein blend as well.

You also want to make sure you use dairy free chocolate chips to make these shortbread protein bars.

Ingredients

Base:

  • ½ cup Oat Flour, 45g
  • 3 tablespoon Coconut Flour, 21g
  • 2 tablespoon Unflavored Protein Powder, 11g, see post for subs
  • 2 tablespoon Vanilla Protein Powder, 11g
  • 2 teaspoon Maple Syrup, Sugar-free recommended below, 10ml
  • ¼ cup Unsweetened Almond Milk, 60ml

Protein Caramel:

  • ¼ cup Peanut Butter Powder, 24g, see post for subs
  • 2 tablespoon Creamy Peanut Butter, 32g
  • 2 tablespoon Vanilla Protein Powder, 11g
  • 4 teaspoon Maple Syrup, Sugar-free recommended below, 10ml
  • 2 tablespoon Water, 30ml

Chocolate Coating:

  • 1½ tablespoon Chocolate Chips, Sugar-free recommended, 21g
  • ¼ teaspoon Coconut Oil

Instructions

  • Line a 7×5” pan or loaf pan with parchment paper; leave an overhang to lift out later.

Base:

  • In a bowl combine oat flour, coconut flour, unflavored protein powder and vanilla protein powder.
  • Add in maple syrup and milk and mix. Mixture will be like a dough.
    Add more milk if too dry, coconut flour if too wet.
  • Transfer to prepared pan and press down.

Protein Caramel:

  • In the same bowl, stir peanut butter powder, peanut butter, protein powder, maple syrup and water.
    Mixture should be thick but smooth and spreadable.
  • Spread on top of base and use back of spoon/spatula or fingers to smoothen.

Chocolate topping:

  • Place chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.
  • Spread chocolate on bar and use back of spoon to smoothen.
  • Transfer to freezer to cool about 15 minutes.
  • Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 6 bars.

    This caramel is so good!! I read the reviews before making these and made extra caramel that I could use for other things. I seriously love the combination of flavors here and the calorie to protein ratio is so good that I’m able to eat half the batch for breakfast without ruining any of my goals.

      Omigosh YES! The caramel really was my favorite part. Definitely used that same caramel for a few other recipes a as well.

    Omg that caramel layer in the middle is to die for….I just want to make a triple batch of that to put on literally every dessert. The whole recipe is super easy to put together…used a mix of semisweet and peanut butter chips for the top layer. We’re inhaling these!!

    OOOOOMMMMMMGGGGG I’m in love with this ?. Felt like a millionaire right after the first bite. Also you’ve got to stop putting up recipes that I just want to eat the whole batch in one go. It’s getting harder by the day ?
