S’mores Protein Blondies – Actually Healthy (Low Fat, Gluten Free)

Actually healthy S’mores Protein Blondies made with protein powder and monk fruit instead of sugar, and peanut butter powder instead of oil or butter. These low calorie and low fat protein powder blondies are the perfect healthy S’mores dessert complete with graham crackers, marshmallows and chocolate chips!

Another “I just got done eating these and they are good!”.

Actually just had 2½ of these s’mores protein blondies as part of breakfast – yes, breakfast because these are high protein and really were part of my post workout meal.

Gooey marshmallows, and that crunchy graham cracker – everything just point here for the full smores effect in this dessert recipe.

Ingredients for S’mores Protein Blondies

These high protein s’mores blondies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect vanilla S’mores protein powder blondie for a campfire alternative!

  • Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
    I used the whey-caesin Vanilla protein powder from Quest Nutrition.
  • Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
  • 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free;  (code HAYLSKITCHEN for a discount here too)
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie protein blondies since it adds the moisture, and also extra protein 
  • Almond Milk or regular milk
  • Baking Soda

And then for the proper S’mores Blondie:

  • Honey Graham Crackers
  • Mini Marshmallows
  • Sugar free Chocolate Chips or chopped chocolate. I use the ones from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Chocolate Chips.

Tips for perfect S’mores Protein Powder Blondies

This healthy s’mores dessert with protein powder is really easy to make, and here’s some pointers to get it right.

  • Use room temperature milk and yogurt;
    This is so the wet ingredients and dry ingredients can mix well.
  • Don’t over-mix the batter!
    Make sure you gently fold the dry mix into the wet to combine them.
    If you over-mix it, the protein powder will make the s’mores blondies tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy protein blondies.
  • Don’t add marshmallows at beginning of baking time or they will completely melt
  • Watch the broil time – this is also to prevent the marshmallows from completely burning and melting. Mine took about 1½ minute.

Alternatives for Healthy S’mores Blondies without Chocolate

For the perfect s’mores flavored high protein protein blondies, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try.
I haven’t testing them all so I can’t say how your recipe might turn out, but I’d love to know if you do!

  • 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour; The same amount by weight
  • Greek Yogurt: Coconut Yogurt
  • Almond Milk: Any other milk 
  • 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
  • Peanut Butter Powder: Regular Peanut Butter, but reduce the milk to about ¼ cup (I haven’t tried this yet though)
  • Chocolate Chips: Chopped up chocolate bar

To make S’mores inspired Vegan Protein Blondies

For a high protein Vegan blondies recipe, use coconut yogurt in place of Green Yogurt and also a plant based protein powder. ProteinWorld has a Vegan protein blend (HAYLSKITCHEN for the discount here too) that would  work well here.
I haven’t tried pea protein or other plant based ones, so I can’t say how those would work here.

For the extras, use dairy free chocolate and Vegan marshmallows (there’s some brands that sell these as well).

How to store S’mores Blondies?

This high protein S’mores blondie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!

Store smores protein blondie bars at room temperature in an airtight container for 1-2 days or in the fridge for a week.

To freeze healthy smores blondies, individually wrap each protein blondie square in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Ingredients

  • 60 g 1:1 Gluten Free Baking Flour, see post for subs
  • ½ cup Vanilla Protein Powder, 45g, about 1½ scoops
  • ¼ cup Zero Calorie 1:1 Sugar Replacement, 48g
  • 4 tablespoon Peanut Butter Powder, 24g
  • ½ teaspoon Baking Soda
  • 1 cup Non-fat Greek Yogurt, 225g
  • ⅓ cup Unsweetened Almond Milk, 80ml
  • 4 sheets Honey Graham Crackers, 62g
  • ½ cup Mini Marshmallows, 22g, or regular
  • 2 tablespoon Chocolate Chips, 28g, Sugar-free recommended below

Instructions

  • Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
  • In a bowl, whisk gluten free baking flour, vanilla protein powder, zero calorie sugar replacement, peanut butter powder and baking soda.
  • In a large bowl, whisk together Greek yogurt and almond milk.
  • Add dry mix to wet, and gently fold until combined.
    DO NOT OVER-MIX or protein powder will make the blondies gummy.
  • Spread ⅔ batter into pan.
    Spread chopped graham crackers (reserve few for top), and add remaining batter on top.
  • Bake for 17 minutes.
    Top with more chopped crackers, marshmallows and chocolate chips.
    Bake another 7 minutes.
    Broil 1-2 minutes (to toast marshmallows).
  • Remove from oven (toothpick inserted into the center should come out mostly dry) and let cool completely.

    Turned out better than i’d ever dreamed of! The marshallow and melted chocolate were amazing, and the crunch of the graham crackers was amazing.

    Hard to believe it’s actually healthy baking. Can’t even taste the greek yogurt or almond milk.
