Magic Whole Wheat Chocolate Bagels (With No Yeast!)

Okay major dilemma here on what these were – Chocolate Bagels or Donuts!

Now I’ve probably got you thinking right?

Difference between bagel and donut?

This donut vs bagel question got me thinking about what the actual difference here was.

So it turns out the difference between a bagel and donut is that the donut is more soft, moist and  cake-like, but the bagel is denser and more bread-like.

Well my first two attempts at this ‘chocolate bagel recipe’ were definitely more like donuts, but i didn’t want to change the name because the idea of a chocolate-flavored bagel was just cool. So I went at it and got it right on number 4.

Ingredients for Healthy Whole Wheat Chocolate Bagels

This healthy whole wheat bagel recipe uses the 2 ingredient weight watchers dough but made with whole wheat flour instead.

  • Whole Wheat Flour + Baking Powder to make a whole wheat self rising flour (a cheaters 3 ingredient bagel)
  • Unsweetened Cocoa Powder
  • 1:1 Sugar-free Sugar Replacement. I recommend the one from Lakanto (the code HAYLSKITCHEN gets you a discount)
  • Greek Yogurt
  • A bit of Salt

And then for a chocolate chip bagel recipe, some chocolate chips for topping (I’d recommend Lakanto again here)

Alternate ingredients for Chocolate Healthy Bagel Recipe:

  • You can replace whole wheat flour with other whole grain flour
    DO NOT USE ALL PURPOSE FLOUR – this is too light and will give the bagels a softer cake-like texture (the donut version)
  • Use coconut yogurt for Vegan and dairy free chocolate whole wheat bagels.
    DO NOT USE NATURAL YOGURT; the dough will be too sticky, and also won’t rise. 
  • Regular sugar in place of 1:1 sugar replacement is okay
    NOT fine confecitioners sugar. You want the small granules or the dough will be too soft.
  • Cacao powder in place of cocoa powder also works.

How to make Whole Wheat Chocolate Bagels

Since these are no yeast bagels, this greek yogurt bagel recipe has no rising time and no billing needed either – perfect for a quick bagel craving.

Make 2 Ingredient Whole Wheat Bagel Dough without Yeast

Preheat your oven to 425°F.

  1. Mix the whole wheat flour, cocoa powder, sugar-free sugar, baking powder and salt in a large bowl.
  1. Add in the Greek Yogurt and use a large spoon to mix them and form a rough ball of dough. There will still be flour, but it’s okay.
  1. Lightly flour a work surface, transfer the dough over to the surface and knead it to form a dough.

Continue until the yogurt and flour are just combined.

Don’t over-mix or the bagels will be too tough.

Roll the whole wheat chocolate bagels dough

  1. Cut the dough into 4 pieces – use a sharp knife here.
  1. Roll the dough balls into logs about 7-8 inches long – lightly flour your hands so the dough doesn’t stick.
  1. Make a ring – the toris shape of a bagel; Overlap the ends here and pinch them together.
  1. Place the bagels on a parchment lined baking sheet.

Egg wash

  1. Whisk an egg, or use egg whites, and brush it onto the surface of the bagels.
  1. Sprinkle on some chocolate chips for a double chocolate chocolate chip bagel!

Make baked whole wheat chocolate bagels with no boiling

  1. Bake for 20 minutes.

Let those bagels cool for at least 20-30 minutes before you eat or store them for later.

How to store Homemade Chocolate Chocolate Bagels

These homemade chocolate bagels are best had fresh, but can be stored on the countertop or the freezer.

To store homemade chocolate chip bagels on the countertop, let them cool completely and then put them in a sealed plastic bag; They should keep for 1-3 days.

To freeze bagels, let the bagels cool completely then place in freezer-safe zipper bags and freeze immediately; They’re perfectly freezer friendly will stay fresh for even 2-3 months.
Thaw your frozen bagels and them serve.

Ideas for Dessert Chocolate Bagel Toppings

Since these healthy whole wheat bagels are more like chocolate dessert bagels, I love to go for the sweet toppings here like sweetened cream cheese or even Nutella. Here’s a good list.

  • Cream Cheese-powdered ’sugar’ spread! I’d recommend reduced fat cream cheese and sugar-free sugar again.
  • Chocolate Hazelnut Spread – try my homemade sugar-free Nutella
  • Peanut Butter
  • (Sugar-free) Sweetened Vanilla Greek yogurt

Ingredients

  • ¾ cup + 1 tablespoon Whole Wheat Flour Pastry Flour, 120g
  • ¼ cup 1:1 Sugar Replacement, or Sugar
  • 3 tablespoon Unsweetened Cocoa Powder
  • 1½ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¾ cup + 2 Tbsp Plain Greek Yogurt, or Coconut Yogurt, 200g

Topping:

  • Whisked Egg, you won’t use the whole thing
  • Chocolate Chips

Instructions

  • Preheat oven to 425°F, and line a baking sheet with parchment paper.
  • In a large bowl, mix whole wheat flour, sugar (replacement), cocoa powder, baking powder and salt until combined well.
  • Add yogurt and mix using a spoon until a rough ball is formed.
  • Transfer to lightly floured work surface and knead with hands about 2 minutes to form a dough.
  • Using a sharp knife, cut into 4 pieces.
  • Lightly flour palms of hands and roll into logs about 7-8” long.
  • Shape logs into a ring; Overlap and pinch ends together.
  • Place on prepared baking sheet, lightly brush tops with whisked egg (or use fingers), and sprinkle on choice of toppings.
  • Bake for 20 minutes – visible surfaces should all be golden-brown.
  • Let cool about 30 minutes; Use a cooling rack if possible.

    Can you use whole wheat flour or must you use whole wheat pastry flour for the chocolate bagels?

      Hi Sharon! I’m so happy you want to try it out. I would recommend using a half and half of whole wheat and all-purpose. You want that light texture 🙂

        Would almond flour work instead of the all-purpose flour?

          Almond flour usually works, but requires a more egg or a binding agent and such since it’s gluten free. Since this is quite a small batch recipe and doesn’t need eggs or anything of that nature, I would say give it a try with half or quarter of the batch? You can avoid wasting too many ingredients this way if it doesn’t work out.
