Okay no jokes, but this recipe was really as last-minute as it gets. I’d had a rice krispie cookie on my recipe list for months and months now, but never got around to it.
I’d even been saving exactly ½ cup of rice krispies cereal in my pantry just for this.

One random evening I just walked into the kitchen and decided to make the thing because I wanted that container to be empty. Major regrets on not having any more cereal because this cookie turned out absolutely AMAZING! And so easy to make too!

Ingredients for Rice Krispie Protein Cookie

This no bake rice krispie protein cookie is made with simple ingredients you probably have in your pantry; Especially if you’re making desserts with protein powder often. Here’s what it takes.

  • Rice Krispies Cereal
  • Vanilla Protein Powder for high protein cookie; I used Quest Nutrition Vanilla.
  • Mini Marshmallows
  • Creamy Peanut Butter; I used the white chocolate flavor peanut butter from American Dream Nut Butter; Its lower fat and higher protein. The link gives you a discount too.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Sugar free Maple Syrup: I use the monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount)

How to make Rice Krispie Cookies with Protein Powder

I use protein powder and peanut butter powder to make this rice krispie cookie a little extra healthy, but it really is super easy to make. Here’s what it takes:

  1. Heat peanut butter and marshmallow in microwave at 20 second intervals for 1-2 minutes until softened.
    Don’t over heat it or the marshmallows will burn and dry up.
  1. Add in remaining ingredients: rice krispies cereal, peanut butter powder, vanilla protein powder and maple syrup (little at a time).
  1. Mix with a spoon to form a dough.
  1. Use parchment paper to roll mixture together, flatten and shape into a cookie.

To store No Bake Peanut Butter Rice Krispie Cookies

This no bake peanut butter rice krispie cookie is a single serve recipe, and likely to finish up in a minute, but you can definitely make it ahead of time!

Keep peanut butter rice crispy cookie in an airtight container and keep on the counter for up to 3 days. 

For longer, place no bake rice crispy treat cookie in the fridge (airtight container again) for up to 1 week or in freezer (using freezer-safe zipper bag) for 2 or 3 months. Be sure to let them thaw on the counter before eating!

Alternatives for Healthy Rice Krispie Cookies with Peanut Butter:

I made these sugar free and gluten free and lower calorie healthy rice krispie with this particular ingredient list, but here’s some options to choose from.

  • Peanut Butter Powder: Use 1 tablespoon + ½ teaspoon Creamy Peanut Butter, but also reduce the maple syrup to maybe 2 tsp.
  • Sugar free Maple Syrup: Regular maple syrup or Honey, but they won’t be Vegan or a no sugar recipe anymore.
  • White Chocolate flavor Peanut Butter: Use regular Peanut Butter, Almond Butter, Hazelnut Butter or even Tahini

Vegan High Protein Crispie Treat Cookies

Use Vegan marshmallows and plant based protein powder to get a Vegan peanut butter rice krispie cookie; I recommend KOS Vanilla protein powder.

  • ½ cup Rice Krispies Cereal, 13g
  • ¼ cup Mini Marshmallows, 11g
  • 1 tablespoon Creamy Peanut Butter, 14g
  • 2 tablespoon Vanilla Protein Powder, 11g
  • 2 tablespoon Peanut Butter Powder, 12g
  • 1 tablespoon Maple flavor Syrup, Sugar-free recommended below, 15ml

Instructions

  • Place peanut butter and marshmallows in a bowl.
    Microwave 1 minute until softened (at 30 sec intervals).
    Lightly mix.
  • Add rice krispies cereal, protein powder, peanut butter powder and maple syrup (little at a time).
    Mix to form dough.
  • Shape into cookie.
