Bold and beautiful colors, and amazing flavor too in this mini blood orange cake. Proper blood orange flavor from the juice and the zest here, but actually healthy and easy too.

Ingredients for Single Serve Protein Blood Orange Cake

This single serve protein blood orange cake is made with a few simple and healthy ingredients, and has no flour, butter or oil and no sugar either! 

  • Blood Orange Juice and Zest
  • Vanilla Protein Powder for healthy, whey protein protein mug cake that’s also sugar free. I used Quest Nutrition Vanilla Milkshake whey-casein protein powder for this mug cake.
    HTLT Supps is another option.
  • Coconut Flour for a low carb protein mug cake
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • Baking Powder
  • Vanilla Extract

If you need to add more sweetness, Stevia Powder or Zero Calorie Sugar Substitute; I use Lakanto, to keep strawberry mug cake sugar free; (code HAYLSKITCHEN for a discount here too)

For the upside down blood orange cake part:

  • Blood Orange
  • Melted Butter
  • 1:1 Sugar FreeBrown Sugar Replacement: I used Lakanto brown monk fruit sweetener

Tips to make Blood Orange Protein Mug Cake

This flourless blood orange protein mug cake really is a simple one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the blood orange mug cake to come off easily.
    Use an oven-safe mug if you need.
  • Don’t over-mix the batter!
    Make sure you gently stir the wet and dry to combine them.
    If you over-mix it, protein powder will make your protein mug cake tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Don’t overbake the blood orange mug cake. The top will should be cooked. It might look slightly soft, but will harden when it cools a bit.

Alternates for this Healthy Blood Orange Mug Cake with Protein Powder

I recommend making this low calorie, healthy and low sugar blood orange mug cake with the protein powder and ingredients listed since it gives the best results.

If you need other options, here’s some alternatives for a healthy blood orange cake for one:

  • Unflavored Protein Powder: ½ tablespoon Coconut Flour
  • Coconut flour: Try using about 3 tablespoon of Almond Flour
  • Egg Whites: 2 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Almond Milk: Any other milk

Ingredients

  • ⅓ cup Vanilla Protein Powder, Whey-caesin, 30g
  • 1 tablespoon Coconut Flour, 7g
  • ⅛ teaspoon Blood Orange Zest
  • ¼ + ⅛ teaspoon Baking Powder
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • 1 Egg White, 31g, 2 Tbsp
  • 1 tablespoon Blood Orange Juice, 15ml
  • ¼ teaspoon Vanilla Extract

Base:

  • 2-3 Blood Orange Slices, 30g
  • ½ teaspoon Zero Calorie 1:1 Brown Sugar Substitute, or regular Brown/Coconut Sugar, 2g
  • ½ teaspoon Melted Butter, 2-3g

Instructions

  • Preheat oven to 350°F and lightly grease a 1 cup ramekin.
  • In a bowl, combine melted butter and brown sugar.
    Spread on bottom of ramekin.
  • Remove skin from blood orange slices and place on bottom of ramekin.
  • In a bowl, whisk vanilla protein powder, coconut flour, blood orange zest and baking powder.
  • Add egg white, milk and vanilla, and stir until combined. Batter should be smooth and thick.
    Taste batter and add sweetener if needed.
  • Pour batter into ramekin, bake for 15-17 minutes.
    Top should be set.
  • Let cool.

  • Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
