Chocolate Chip Pancake Mug Cake (Vegan & Gluten Free)

Pancakes in a Mug. Why didn’t I think of this sooner? 

If like me, you’re in the mood for a short stack – or even a tall one – but too lazy to whisk up that batter and then and then endlessly flip those flapjacks, this pancake mug cake will be your lifesaver!

Another reason I’d rather make my pancake in the microwave – coz I find it super hard to make all my pancakes perfectly round and pretty looking. Quite a risky endeavor when it comes to having to take photos.

Ingredients for Chocolate Chip Pancake Mug Cake

All you need for this simple pancake mug cake recipe is a good quality pancake mix and a few pantry staples. Here’s the list:

  • Pancake Mix; Kodiak Buttermilk Pancake Mix is my go-to for this mug cake and all my recipes with store bough mixes.
  • Baking Powder
  • Water
  • Sugar free Maple Syrup to sweeten. For a sugar-free and healthy mug pancake I recommend Lakanto maple flavored syrup.
    You can switch this out for a regular syrup, honey or even regular sugar with about 2 teaspoons of extra water.
  • A bit of Vanilla Extract

And then of course.. Chocolate Chips! I’d recommend the sugar free ones from Lily’s here.

How do you make a Chocolate Chip Mug Cake with Pancake Mix

This recipe for a kodiak pancake in a mug really couldn’t be easier!

Step 1: Mix your pancake ingredients – pancake mix, water, maple syrup and baking powder in a bowl to make the batter.

Step 2: Add in most of the chocolate chips, but leave some for the topping later.

Step 3: Grease the inside of a microwavable mug with cooking spray or oil.

Step 5: Pour the pancake batter into the mug

Step 6: Microwave for 1 min 15 seconds. You might need 5-10 seconds extra depending on the microwave; make sure the top is dry to touch.

Add on some more chocolate chips, let it cool a bit, and indulge!

What Pancake Mix to use for Microwave Pancake in a Bowl

I wanted to for a protein pancake in a mug, I used Kodiak Cakes Buttermilk Pancake Mix. I’ve tried this mug cake recipe with their dark chocolate pancake mix as well and it was beautiful.

If you’d like a regular version, you can also use Aunt Jemima’s or Krusteaz for this pancake in a mug. Just be sure that whatever brand of pancake mix you use, it’s the kind that only needs water + mix to make regular pancakes.

Vegan, Paleo and Gluten Free Pancake Mug Cake

Since this pancake mug cake with pancake mix has no eggs and no butter, the recipe is already Vegan!

If you want a gluten free version of this mug cake, make sure you use a gluten free pancake mix. Kodiak Cakes has one of those too.

Birch Benders has a Paleo pancake mix that would be great for this mug cake too!

Other flavors for Pancake Mug Cake with Pancake Mix

I chose to go for a chocolate chip mug cake version of this mug pancake, but you play around with the mix ins as you’d like.

Skip the choco chips and make a simple vanilla mug cake with pancake mix and then add in your choice of nuts, seeds or berries; Maybe some blueberries or walnuts!

Ingredients

  • ¼ cup Pancake Mix, about 30g
  • 3 tablespoon Water
  • 1 tablespoon Maple Syrup, Sugar free recommended
  • ¼ teaspoon Vanilla Extract
  • ¼ teaspoon Baking Powder
  • 1 tablespoon Chocolate Chips, Sugar free recommended

Instructions

  • Combine all the ingredients except the chocolate chips in a bowl – pancake mix, water, maple syrup, vanilla extract and baking powder.
  • Stir in chocolate chips, reserving a few.
  • Lightly grease a microwave-safe mug with oil or cooking spray.
  • Pour in pancake batter.
  • Microwave on high for about 1 min 15 seconds – top should be dry to touch.
  • Sprinkle on remaining chocolate chips, let cool for a few minutes and enjoy!

    Thanks for taking the time to look into this recipe. I marked it as vegan because the same recipe can be made with Vegan substitutes that are available commonly on the market.
    User just-add-water Vegan pancake mix.

    I’ve had people to try out my recipes with some of these substitutions and they all worked fine.
