Microwave Banana Bread in a Mug (Paleo-friendly)

Mug cakes are perfect small-batch desserts. Whether you’re looking for a microwave-friendly dorm-room dessert or even something to serve at a party whike trying to avoid a messiness or wastage, these little things are just what you need. 

But the time you’re really going to appreciate this is when you’re alone and craving some banana bread. 

You cant just snap your fingers and have banana bread appear, but this is the next best thing: Snap your fingers, get busy for 3-4 minutes, and then have a banana mug bread appear!

How to make?

  1. Mash the banana.
  2. Mix everything up in a lightly greased microwave safe mug.
  3. Microwave for 3½ mins. The top will be a little wet, but just wait it out.

If you’re feeling a little extra, top it with some chopped walnuts and yogurt, and DIG IN!

Gluten free & Dairy-free

Using coconut flour not only makes this mug cake Paleo-friendly, but gluten-free and grain-free too.

Same with the almond milk; No dairy involved. Gives it the moist texture too.

Natural sweetness

The fruit and coconut flour are slightly sweet in themselves, but to add a little something extra, I used stevia-sweetened maple syrup (shoutout to Sweetleaf Stevia here). It’s a natural sweetener so there’s no added sugars.

Now you don’t have to worry about having to make a huge loaf and and eating it day-after-day so it does’t go bad. Although, banana bread every day wouldn’t be too bad either now would it?

Ingredients

  • 1 large Banana, Ripe and Mashed, 135g
  • 2 tablespoon Coconut Flour, 16g
  • 1 Egg
  • 2 tablespoon Almond Milk, Unsweetened
  • 1 teaspoon Stevia-sweetened Maple Syrup, 5ml
  • ¼ teaspoon Baking Powder
  • ⅛ teaspoon Cinnamon Powder

Instructions

  • Spray a 12-14 oz microwave-safe mug with cooking spray.
  • Transfer all ingredients into the mug and mix well.
  • Microwave on high for about 3 minutes 15 seconds or until a toothpick inserted into center comes out dry. Center of the top surface might look soft, but will firm once it cools. Don’t overcook. Microwave additional time at 5 second intervals if needed.
  • Let it cool, top with chopped walnuts, and dig in!

  • You get an 8 oz serving size, but make sure the cup is larger so the cake can rise without the batter spilling spill out.
