Imagine waking up to a jar filled with creamy oats, a lush pistachio pudding, the rich crunch of pistachios, and a protein-packed punch to kickstart your day. These overnight oats are a symphony of textures and flavors, providing sustained energy and a delightful start to your day. 

And to make it extra festive for the Christmas season, I tried to go for the red and green vibe with some cranberries too 🙂 Husband was certainly a fan.

Ingredients for Pistachio Protein Overnight Oats

This pistachio overnight protein oats recipe is made with simple and healthy ingredients, sweetened with protein powder with no extra sugars.

  • Oats – Instant or Rolled Oats
  • Vanilla Protein Powder needed for high protein pistachio oatmeal;
    I used ½ whey-casein Vanilla flavor from Quest Nutrition, and ½ Plant-based Vanilla protein powder from KOS.
  • Unsweetened Almond Milk
  • Non-fat Plain Greek Yogurt
  • Flaxseed Meal; This is optional, but I really recommend it!

For the pistachio protein pudding:

  • Non-fat Greek Yogurt
  • Vanilla Protein Powder Quest Nutrition  again here
  • Pistachio Instant Pudding Mix: I used this sugar free and fat free one from Jello
  • Unsweetened Almond Milk

And the toppings:

  • Chopped Pistachios

To make Pistachio Pudding Overnight Oatmeal with Protein Powder

This pistachio pudding overnight oats recipe with protein powder is super quick and easy.

  1. Blend the oats ingredients in a blender: Oats, protein powder, flaxseed, milk, yogurt.
  1. Make pudding: Whisk the milk, yogurt, protein powder and pudding mix in a bowl.
  1. Assemble: Pour oats into 2 jars, add pistachio pudding on top.
  1. Cover and place in the fridge to chill for about 1-2 hours.
    The oats need this time to absorb the liquid and soften, creating that creamy and delicious texture.
  1. Top with chopped Pistachio and serve.

Preparation:

After assembling your Pistachio Overnight Oats in a jar or container, make sure you securely close the lid.

Shelf Life:

Pistachio proats are typically good for consumption within 3-4 days. While they can last a bit longer, the texture may change. Enjoying them within the first few days ensures the best taste and consistency.

Give it a Stir:

I make these pistachio overnight oats a healthy recipe with the ingredient list above, but here’s some other ingredients to try:

  • Greek Yogurt: Coconut Yogurt, or even unsweetened applesauce or mashed banana (but adjust protein powder in this case)
  • Flaxseed Meal: Ground chia seeds, or just skip it
  • Almond Milk: Regular milk or lactose-free milk or any other milk
  • Sugar-free Pistachio Pudding: Regular pudding mix

This pistachio overnight oats can easily be made Vegan and dairy free with coconut yogurt and plant based protein powder.

Ingredients

  • ½ cup Rolled Oats, 45g
  • ½ cup Vanilla Protein Powder, Whey-casein and Plant-based mix, 45g
  • ¾ cup Unsweetened Almond Milk, 180ml
  • 6 tablespoon Non-fat Greek Yogurt, 84g
  • 1 tablespoon Flaxseed Meal, 6g

Pistachio Pudding & Toppings:

  • 6 tablespoon Non-fat Greek Yogurt, 84g
  • ⅓ cup Unsweetened Almond Milk, 80ml
  • 3 tablespoon Vanilla Protein Powder, Whey-casein, 17g
  • 1½ tablespoon Pistachio Instant Pudding Mix, 10g, Sugar-free recommended
  • 1 tablespoon Chopped Pistachios, 14g

Instructions

  • Combine all Oats ingredients in a blender – oats, protein powder, milk, yogurt, flaxseed.
  • Blend about 20 seconds until just combined; Not completely pureed.
  • In a bowl, make pistachio pudding: mix yogurt, milk, protein powder and pistachio pudding mix.
  • Pour oats into 2 jars, top with pistachio pudding.
    Cover and refrigerate overnight, or at least 3 hours.
  • Top with chopped pistachio.
    Add more milk before serving if needed.
