High Protein Strawberry Crunch Cake – Healthy, Solo Recipe

A pretty amazing Protein Strawberry Crunch Cake for a healthy single serving dessert! This strawberry protein mug cake has a no bake strawberry crunch crumble topping and is low carb, gluten free and has no added sugar!

I don’t know what the story is behind the actual strawberry crunch concept, but I’d been seeing a lot of these on Instagram recently, so I gave in.

Use freeze-dried strawberries and some cornflakes cereal to make a crunchy crumble topping and put it on top of a single serving protein strawberry cake. Real magic happened here!

Ingredients for Single Serve Protein Strawberry Crunch Cake

This single serve protein strawberry crunch cake is made with a few simple and healthy ingredients, and has no flour, butter or oil and no sugar either! 

  • Strawberries
  • Vanilla Protein Powder for healthy, whey protein protein mug cake that’s also sugar free. I used Quest Nutrition Vanilla Milkshake whey-caesin protein powder for this mug cake.
  • Unflavored Protein Powder for just some extra protein. I used a whey-caesin blend from Quest Nutrition.
  • Coconut Flour for a low carb protein mug cake
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • Baking Powder
  • Sugar free Maple Syrup; I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount)
  • Vanilla Extract

For the true no bake strawberry crunch topping part:

  • Freeze-dried Strawberries
  • Cornflakes Cereal
  • Melted Butter

Tips to make Strawberry Protein Mug Cake with Crunch Topping

This flourless strawberry protein mug cake really is a simple one and made in a mug or ramekin, but make sure you do all of this stuff to get is perfect.

  • Grease the ramekin! You want the strawberry crunch mug cake to come off easily.
    Use an oven-safe mug if you need.
  • Use completely ripe strawberries since it is more sweet, and will also puree better.
  • Don’t over-mix the batter!
    Make sure you gently stir the wet and dry to combine them.
    If you over-mix it, protein powder will make your protein mug cake tough, dense and gummy.
  • Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter.
  • Don’t overbake the mug cake. The top will should be cooked. It might look slightly soft, but will harden when it cools a bit.
  • Use melted butter for the strawberry crumble topping for this crunch cake; You want it to mix well with the strawberries and cereal.

Alternates for this Healthy Strawberry Crunch Mug Cake with Protein Powder

I recommend making this low calorie, healthy and low sugar strawberry crunch cake with the protein powder and ingredients listed since it gives the best results.

If you need other options, here’s some alternatives for a healthy banana cream pudding cake for one:

  • Unflavored Protein Powder: ½ tablespoon Coconut Flour
  • Coconut flour: Try using about 3 tablespoon of Almond Flour
  • Egg Whites: 2 tablespoon aquafaba (chickpea liquid). I haven’t given this a try yet though.
  • Almond Milk: Any other milk
  • Cornflakes Cereal: Chex Cereal, Vanilla Wafers, or maybe even Graham Crackers?
  • Melted Butter: Coconut Oil

A Simple Vegan Strawberry Crunch Cake

This single serving strawberry crunch cake recipe has can easily be made Vegan too.

For the perfect Vegan protein strawberry crunch cake, make sure you use a plant based protein powder and aquafaba in place of egg whites.
Also use dairy free butter or coconut oil for the topping

Ingredients

  • ¼ cup Vanilla Protein Powder, Whey-caesin, 22g
  • 1 tablespoon Unflavored Protein Powder, Whey-caesin, 6g
  • 1 tablespoon Coconut Flour, 7g
  • ¼ + ⅛ teaspoon Baking Powder
  • ¼ cup Chopped Strawberries, 36g
  • 1 tablespoon Unsweetened Almond Milk, 15ml
  • 1 Egg White, 31g, 2 Tbsp
  • 1 teaspoon Maple Syrup, Sugar-free recommended below, 5ml
  • ¼ teaspoon Vanilla Extract

Topping:

  • ⅛ oz Freeze Dried Strawberries, 3-4g
  • 1½ tablespoon Cornflakes Cereal, 3g
  • 1 teaspoon Melted Butter, 5g

Instructions

  • Preheat oven to 350°F and lightly grease a 1 cup ramekin.
  • In a blender, combine strawberry and almond milk until pureed.
  • In a bowl, whisk vanilla protein powder, unflavored protein powder, coconut flour and baking powder.
  • Add pureed strawberry, egg white, maple syrup and vanilla, and stir until combined. Batter should be smooth and thick.
  • Taste batter and add sweetener if needed.
  • Pour batter into ramekin, bake for 15-17 minutes.
  • Top should be set.
  • Let cool.

Topping:

  • Crumble freeze dried strawberries and cornflakes cereal into a small bowl.
  • Add melted butter and mix
  • Remove cake onto plate, and top with strawberry mixture.
