Protein Zucchini Oats

Pro-Z-Oats is what I call Protein Zucchini Oats. Its a warm bowl of high protein oatmeal thats got an extra dose of veggies too. A delicious meal for all the fitness fans and oatmeal fans alike.

I’ve been doing protein powder in my oatmeal everyday for breakfast for over a year now, so PrOats is quite an old concept for me. But after discovering the whole Zucchini Oats contraption a couple weeks ago, I had to try out a high protein version of that too!

Workout Food

This big old bowl of oatmeal is basically the best workout fuel you can find. It’s got a ton of good carbs – and fiber too – from the oats, is packed with protein, and has a bunch nutrients from the zucchini for an added bonus.

Have it an hour or so before your workout for an energy boost, or immediately after – a post workout meal – to replenish that glycogen and build that muscle. And because its basically pure carbs and protein and so low in fat, it doesn’t take long to digest either!

Breakfast with Vegetable

If you’re worried about being able to taste that zucchini, with your favorite protein powder in there, that really isn’t an issue.

It may be oatmeal with vegetables, but its also an oatmeal with protein powder. So in the end, you just have a delicious porridge. Go give it a shot!

Pro-Z-Oats or Protein Zucchini Oats is a high protein oatmeal with an extra dose of veggies. With a ton of good carbs and protein, its one of the best pre or post workout fuels you can find!

Ingredients

  • 1 cup Instant/Quick or Rolled Oats, 90g
  • 1 cup Zucchini, Shredded (Moisture Intact), 1 medium, 176g
  • 1¾ cup Water
  • 1 scoop Protein Powder, about ⅓ cup, 30g
  • Stevia Sweetener, 2 teaspoon sugar worth (Use your brand’s Conversion Chart), Optional
  • Pinch of Salt

Instructions

  • Finely shred zucchini using a large-hole grater or food processor and squeeze out as much moisture as possible using paper towels.
  • Whisk together all ingredients in a saucepan over medium heat and cook uncovered for 2-3 minutes (Instant Oats) or 8-10 minutes (Rolled Oats), stirring occasionally.
  • Transfer to a bowl, add protein powder and sweetener if using, and fold.
  • Serve hot with your choice of toppings.

Notes

  • Alternatively, microwave on high for same amount of time.
