S’mores Protein Balls – Good like Real, but Healthy!

I actually had my fingers crossed that the marshmallow would actually come through in these protein bites and I was so happy they did.


It really was like a sight for sore eyes, because that might just have been the main reason I went for a s’mores inspired protein bite recipe to begin with!

Ingredients for S’mores Protein Balls

These healthy s’mores protein balls are made with clean ingredients, but still have the originals of what you’d expect in a smores dessert – the graham crackers and marshmallows. Here’s all that goes in:

  • Honey Graham Crackers
  • Rolled or Instant Oats
  • Protein Powder for high protein energy balls recipe, and also replace the sweetener.

    Another option would be Quest.
  • Unflavored Collagen I use the one from Further Foods (HAYLSKITCHEN gives you a discount)
  • Coconut Flour
  • Unsweetened Almond Milk
  • Mini Marshmallows

For the coating:

  • Chocolate Chips: I’d recommend the sugar free ones from Lakanto (Use my code HAYLSKITCHEN for a discount) 
  • A bit of Coconut Oil

How to make Smores Energy Bites with Protein Powder

These smores protein powder balls really are extremely easy to make – a simple no bake, mix and roll recipe.

  1. Process main dry ingredients in a food processor – graham crackers, vanilla protein powder, unflavored collagen, oats and coconut flour.
  1. Transfer into a bowl, add milk.
  1. Stir until it forms a dough.
    If it’s too dry, add just a teaspoon of milk, and some more coconut flour if too wet.
  2. Spoon out some of the protein ball mix, about 1-2 tablespoon worth, roll into ball.
    Make a depression, place the marshmallow in, then cover and roll up again.
  1. For that chocolate coating:
    1. Place chocolate chips and coconut oil in a bowl and microwave 1min 30 seconds – stirring every 20 seconds – until melted.
    2. Line a plate or baking sheet with parchment paper.
    3. Place balls (one at a time) into chocolate, roll around using 2 forks or spoons coat.
      Place on prepared plate/sheet to cool

To Store Smore’s Protein Energy Bites

These s’mores inspired protein balls are best stored in the fridge since they do have a bit of milk in there.

To store marshmallow protein bites in the fridge, keep in an airtight container for up to 1 week.

To freeze s’mores bliss balls, place in an airtight sealed container or freezer safe zipper bag  for 2-3 months. Let them thaw on the counter before eating!

Alternate ingredients for healthy S’mores Energy Balls

  • Protein Powder – Lakanto 1:1 Zero Calorie Monkfruit sweetener to keep it sugar free. (code HAYLSKITCHEN gets you a discount).
  • Unflavored collagen: Unflavored protein powder, or even Almond flour or Oat flour
  • Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
  • Almond Milk: Regular milk or other non dairy milk
  • Chocolate Chips: Chopped chocolate bar, or leave out if you wan’t to.

Ingredients

  • 2 sheets Honey Graham Crackers, 31g
  • 1 scoop Vanilla Protein Powder, 30g
  • 1 scoop Unflavored Collagen, 10g, see post for subs
  • ⅓ cup Instant/Rolled Oats, 30g
  • 3 tablespoon Coconut Flour, 21g
  • 3 tablespoon Unsweetened Almond Milk, 45ml
  • 8 mini Marshmallows, 4g
  • 2 tablespoon Chocolate Chips, Sugar free recommended, 28g
  • ¼ teaspoon Coconut Oil

Instructions

  • Combine first 5 ingredients in food processor and process until fine – graham crackers, vanilla protein powder, unflavored collagen, oats and coconut flour.
  • Transfer to a bowl, add milk and mix. milk if the mix is too dry or coconut flour if the mix is too wet.
  • Spoon out about a tablespoon of mixture, roll into ball.
    Press a depression, place a marshmallow in the middle and cover. Roll into ball again.
    Repeat with all mixture; You should have 8 protein balls.
  • Place the chocolate chips and coconut oil in a shallow bowl and microwave for about 1½ minutes – at 30 second intervals – until it’s completely melted. Let cool about 5 mins.
  • Line a plate or baking sheet with parchment paper.
  • Place the protein balls, one at a time, in the melted chocolate, and use 2 forks/spoon to roll it around until completely coated.
    Shake off excess chocolate and place on baking sheet to harden.
