Beautiful Crumbl inspired Twix Protein Cookies made with a vegan and gluten free cookie, peanut butter protein caramel and sugar free chocolate. A copycat Crumbl Twix cookie at home, but healthy and high protein!

I recently heard the hype of the Crumbl bakery cookies and everyones making homemade copycat versions of those.

So hopped on the train here with my own high protein version of the Crumbl Twix cookie, to get the authentic feel in my kitchen, but also keep it healthy.

Perfect sugar free protein Twix cookie here: protein shortbread cookie, protein caramel made with peanut butter powder, and a sugar free chocolate topping.

Ingredients for Protein Twix Cookies

These Crumbl bakery inspired high protein Twix cookies are made with a few healthy ingredients, use oat flour, and have no oil or butter.

  • Oat Flour – Use gluten free if needed
  • Protein Powder for high protein cookie recipe, and also replace the sweetener.
I recommend the ProteinWorld Slender Blend or Whey Protein Powder for this recipe to keep it sugar free; Use the code HAYLSKITCHEN for a discount.
    Another option would be Quest.
  • Creamy, Runny Tahini
  • A bit of Unsweetened Almond Milk

And for peanut butter protein caramel cookie filling

For a sugar free, low calorie and high protein dessert, I topped the Crumbl twix cookie with a protein peanut butter caramel.

  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Vanilla Protein Powder – this is what replaces the sugar here. I used ProteinWorld Whey again.
  • Water

And the Sugar Free Chocolate Topping for homemade Crumbl Cookies:

  • Sugar free Chocolate Chips to make this a protein fudge bar with no added sugar. I use the ones from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Chocolate Chips.
  • A bit of Coconut Oil

Tips for Homemade Copycat Crumbl Cookies

These Protein Crumbl Twix cookies are really easy to make, but here’s a few pointers to make them just right every time.

  • Use Oat Flour not Oats
You want a smooth cookie dough here. You can also make your own oat flour by blending oats in a high speed blender.
  • Creamy Tahini, not crunchy
So that it mixes in smoothly with the rest of the protein cookie dough.
  • Don’t over-mix the cookie dough!
Make sure you gently fold the dry mix into the wet to combine them into a dough.
If you over-mix it, the the protein powder – will make it tough, dense and gummy.
  • Let the cookies cool completely before filling
Or the filling will get too melty and also ruin the cookie.

Alternative Ingredients for Healthy Twix Cookies

  • Oat flour: Use an equal amount of almond flour (by cups). This would also give you a Keto Twix Protein Cookie with the right chocolate chips.
  • Tahini: Cashew butter, almond butter or any nut or seed butter; I would not recommend peanut butter because of the strong flavor.
  • Almond Milk: Regular non-dairy milk
  • Protein Powder – Lakanto 1:1 Zero Calorie Monkfruit sweetener to keep it sugar free. (code HAYLSKITCHEN gets you a discount). You might need to adjust the quantity or reduce the amount of almond milk in this case.
  • Peanut Butter Powder: Regular creamy peanut butter, but reduce the amount of water.

Vegan Twix Protein Powder Cookies

Since there’s no eggs or butter needed, all you need for vegan protein Twix cookies is to use a plant based protein powder and dairy free chocolate.
ProteinWorld has a Vegan protein blend as well (HAYLSKITCHEN for the discount here too) which would be great for these caramel topped protein cookies.

Make Ahead and Store Protein Crumbl Cookies

Store these easy copycat Twix cookies on the countertop for 2 days or in the fridge for about 5 days, and enjoy them as a make-ahead high protein dessert, snack or post workout meal.

To store Twix-flavored homemade Crumbl cookies in the freezer, let each cookie freeze individually (place on parchment-lined baking pan in freezer), then wrap each cup in plastic wrap and stash them in freezer-safe zipper bags. They should keep 2-3 months.
